Wacky Buckwheat Spice Cake

Reviewed: Sep. 28, 2014
Great flavor! I topped ours with freshly made applesauce. I have made wacky chocolate cake before many years ago but this version is superior. I have to eat wheat-free so I was glad someone posted in comments below they used corn flour. This is so good. I will make this on a regular basis. I grated lemon peel in the batter. I milled my own flour. I found the batter to be very thick so I added extra water turned out fine. I used millet flour, buckwheat, and cornstarch. Next time will try rice or corn in place of millet.

It is very good. I used vanilla almond milk. I can't use real cream or milk anymore. I think I'll try this on my oatmeal next. My Rooibos tea was extra special this afternoon. Grand Discovery!!I will making this on a regular basis.

Rice Crust for Pizza

Reviewed: Jun. 13, 2014
Had leftover pieces for breakfast. It was fast and would have been faster if rice was cold already. I baked the crust longer than 4 mins. I continued to bake after toppings were added. I would not use juicy toppings straight on this. I put mushrooms in frying pan first, cooked then added to pizza. I tried many GF flour pizza doughs. I liked this way better. Going to be a staple on Friday. This uses staples I always have in the house. Sorghum flour cost $28 for 2 small bags made the pizza dough and hated it! This is a winner by a landslide!

Orzo and Tomato Salad with Feta Cheese

Reviewed: May 2, 2014
I used the recipe exactly; except I needed it to be gluten free so I used cooked brown rice and wild rice or you could use Quinoa. If you have gluten free noodles on hand- go for it/I was out sadly. I love the flavors. I would add mushrooms in place of olives if salt is a concern. A keeper.

I used 1 cup wholewheat flour(Golden temple brand) and 2 cups white flour as we are diabetic. Otherwise followed the recipe. My husband says 4.5/5 for this recipe. A keeper.

Butter Tarts I

Reviewed: Dec. 4, 2013
I've tried with nuts alone as my step-daughter won't eat raisins. Next batch exactly as above 5/5. 3rd batch did raisins and almonds cut down brown sugar by a 1/3 rd of a cup and replaced with maple syrup. Outstanding!

Raisin Butter Tarts

Reviewed: Nov. 28, 2013
Well, I tried these tonight for the first time. My husband said no to the nutmeg. Personally, I would have left it in as I love the spice. I only put one TBSP of lemon for the above recipe. I liked the butter tarts but my husband said they were too sweet.

Blueberry Gelatin Salad

Reviewed: Oct. 11, 2013
We made this a few days ago for my daughter's grad supper. We made the cherry version with Cherry Jello and Cherry pie filling. It was excellent. I will make this again. Simple and a hit. I left the pineapple out. I think the only addition I would add sometime sprinkle with coconut over topping.

Sourdough Drop Biscuits

Reviewed: Sep. 28, 2011
Just came out of the oven! I think this recipe is adaptable. Can make sour or sweet as desired. This is the first time I made this. I increased the baking soda to 1 tsp for my batch. Greased my pan with butter flavored Pam. This is a keeper. Yum!
