Lime Cilantro Cauliflower "Rice"

What a great idea! I am a fan of cilantro lime rice, and I love cauliflower. This came out great. Even my husband (super picky, and doesn't care for vegetables, hates cauliflower) thought this was rice. Because he saw me cutting the cauliflower he knew there was cauliflower in it, but he thought it had rice too! Next time when I make it I will make it when he can't see it, and see if he can tell!

Super easy to make. I was expecting something like truffles, but this comes out like a chocolate flavored caramel. I left half the batch regular and rolled in cocoa powder and chopped cashews. The other half I mixed toasted coconut into the "dough", then rolled balls in toasted coconut. I bet this would be delicious dipped in chocolate, too! Great recipe!

Pumpkin Fudge

This is a wonderful recipe, with a strong pumpkin flavor, without being overly sweet. Very creamy. The only changed I made was to cook the milk and sugar on low until the sugar was well disolved, then I turned it up to med low until it reached a boil. We love pumpkin in my house so I had been eyeballing this recipe for some time. I went out and bought all the ingredients, and then my family went to the local pumpkin farm where they had pumpkin fudge on sale. I bought a piece to see how I should expect mine to turnout because I had never tried it before. I was upset that it was rather grainy and overly sweet. My husband liked it so I went ahead and made this recipe. OH MY GOODNESS!!!!! So much better than the stuff at the pumpkin farm.

Roast Sticky Chicken-Rotisserie Style

The seasoning on the chicken itself was not very special, but the slow cooking made for an amazing moist and fall apart chicken. I didn't realize that chicken that tastes like what I get from the deli could be made at home with out special equipment. I was very pleased with this recipe, as was my family.

General Tsao's Chicken II

This was wonderful! This was at least as good as what we have gotten at restaurants. We didn't have a cup of cornstarch, so we just used flour to coat the chicken, but it turned out great. I was hesitant to fry the chicken twice, but it really made a difference on how crispy it came out. The sauce was a little too orange flavored, but they may have been my husband "helping" me. Definitely a keeper, and we will be making this again. It's a new favorite in our house.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

My husband gave this 5 stars, I would give it 3, so we will split the difference and call it 4. It was tasty, but the blue cheese overpowered the beef, and I didn't like the texture of the crumbs.

Bran Flakes Muffins with Raisins

I followed the instructions exactly. I went in to check on the muffins after about 22 minutes and they were already burnt. I pulled one out to taste, and they were mostly flavorless except for the salt. Waaaaayy to much salt. I will not make again.

Portuguese Fried Bread

This is an excellent and easy recipe. I was trying to find some Portuguese recipes to get in touch with my heritage, and I stumbled on this. The bread is chewy and slightly sweet, almost similar to a gordita. My husband and son LOVE them.

Chicken Enchilada Soup III

We just made this tonight, and it was lovely. I think this is one of those soups that is easy to toss together, but gets most of it's flavor from the garnishes you choose. I did substitute about 1.25 lbs of frozen pork for the chicken (I was looking for a recipe to help use up some of the boneless pork I snagged for 60 cents a lb!), and tossed everything into my crock pot instead. After about 6 hours I shredded the pork and put it back in for another 20 minutes on high, the same time I added the masa. I only used half a cup of masa, but I mixed it into my cup of water very slowly- no grittiness. We used the cheese as a garnish instead of adding it to the pot. We topped with cheese, crema mexicana, and crushed tortilla chips. When the crema got stirred into the soup it came out very velvety. I added corn, black beans and some green chilies to my bowl because I am the only one who likes them in my family. All together, it's any easy base soup that you can change the flavor of by changing your toppings. Definitely worth a try.

Kind of a pain to make, but worth it. These were very good. However this makes a large batch, more than we wanted to eat for one meal, and they aren't so great reheated.
