Carrot Cake XI

I made this for my brother's birthday and it was a huge success. Here are my changes: I used 1 c brown sugar and 1 c white. Only 1/2 c oil. 1 c crushed pineapple, 1/2 t nutmeg and 1/4 t ginger. Also, I didn't really measure the carrots, but it was between 2-4 cups. This doesn't rise much, but it is super moist and flavorful and not too heavy.

Tiramisu II

This was very good--with a few adjustments. I used 1/4 c of rum, 1-2 cups strong coffee (don't have an espresso machine) and grated chocolate for top. Also, I didn't bother soaking the ladyfingers. I just laid them in the pan and drizzled the liquid over them and it worked great.

Morning Glory Muffins I

I loved these! My children found them a bit too healthy tasting, but they still ate them. I substituted brown sugar for white and I think it gave them a richer flavor. Moist and hearty.

Spinach Cheddar Muffins

I added many of the suggested extra ingredients to add more flavor and they were OK. Very moist. Something is off with the flavor--almost bitter. I am going to try it again with more adjustments. Maybe more salt and a little sugar.

The basic recipe is great. However, I think the oven temperature is too high. My first batch burned. I later found that other recipes said to bake at 425. I did that with my next batch and they came out perfect!

Easy OREO Truffles

I've made these over and over again and they are always a big hit. I generally dip them in chocolate bark and decorate with a swirly frosting line. Also, don't have them too cold when dipping or the chocolate will crack.

Great Easy Waffles
