Winter Lentil Vegetable Soup

This was absolutely wonderful!!!!!!! I followed the advice of another review by making the recipe with more lentils and liquids and it lasted us for several meals. We love to heat up soup for lunch with a grilled cheese sandwich or bread during the cold winter months. Here is the review that I followed: "to take out some of the starch I rinsed & drained the lentils. I followed the amount of ingredients suggested by the tool except for these items: 1 1/2 c green lentils & 1/2 c red lentils, 3 stalks celery, 1 large onion, 4 c chicken broth & 6 cup veg. broth, many more cloves garlic 1/2 crushed 1/2 chopped, finally 1 tsp hot curry powder."

Robin's Best Ever Hummus

Ok, so this is really good and a little spicy from the garlic! I didn't have tahini in the house but really wanted some hummus, so I substituted it with 1 tsp. of no sugar peanut butter...OMG...it is so good! Thanks for the recipe!

Zucchini Bread

This was a very good recipe! I omitted the chocolate chips, as I like the taste of zucchini bread and I didn't want it overpowered by the chocolate. I didn't have any sour cream and so I substituted the sour cream with yogurt. This made the bread very moist and it was quite delicious! It was devoured!

Cavatapi with Chicken Ragu, Mozzarella and Basil

This was easy, different, and really tasty. I live in Italy and so it is difficult to come across a new pasta dish that we haven't already tried. I think I will try this one out on some Italians just to see what they say.

Restaurant Style Chicken Nachos

My kids ask me to make nachos weekly now!!!!! Thank you so much for this recipe! I use my own homemade salsa and it is to die for. Sometimes we add some black olives on top with a little guacamole on the side.

Melt In Your Mouth Chicken Pie

This recipe was a great inspiration! I live overseas, so cream of chicken soup must be homemade. I first made a chicken soup with carrots, onion, celery and chicken. Then I made a cream base with 2 cups of milk and a rue. I put the ingredients (minus the eggs), with some broccoli and veggies into a porcelain baking dish and covered it with the biscuit dough. This chicken pot pie was awesome!!! My husband ate for three tonight! I will definitely make it again!

Easy Chicken Marsala

This recipe was good, although a little more like chicken alfredo than chicken marsala. But, my family liked it! I like to fillet my chicken and tenderize it, so the cooking time needs to be much less, otherwise the chicken is quite dry. I will definitely do this recipe again!

Tortilla Soup

This recipe was a great inspiration! I live overseas and so a lot of the ingredients were not at my disposal. I used two chicken breasts and boiled them for three hours until they shredded easily. Then I used one can of diced tomatoes with my own Mexican spices. The cumin makes this soup! I also added a can of corn, which gave it a nice sweet surprise. I also used some flavored tortilla chips which were an additional flavor booster. I will definitely use this recipe again!!!

Spinach and Leek White Bean Soup

This soup was wonderful and easy! As they say in Italy, "Buonissima!" The only adjustment that I had to make was to add more liquid. I would say 2 more cups of water makes it go a little bit further, which is a good thing considering that my family devoured it!

Crunchy Chicken Fingers

These were just ok. I used healthy potato chips, as one reviewer recommended, and some taco seasoning to add a zip. They still lacked flavor. Next time I will add just a little more salt. I liked the consistency and the ease! I will try again but with many adaptions. I also made a quick honey mustard dip with mayo, dijon and honey that was to die for!
