S'mores Crumb Bars

These were delicious. I didn't have graham crackers (they don't sell them here in Sweden) but I used Digestive crackers/cookies as a substitute and it turned out really good.

To Die For Blueberry Muffins

Turned out amazing! Fresh blueberries aren't in season here yet so I used frozen. Made the muffins more blue in color but they still tasted great! The crumb topping was perfect too. If it seems too heavy just add more sugar, flour, and cinnamon until it becomes light and fluffy. It may mean you melted the butter too much or added too much butter.

Easy Chicken Satay

This was really delicious. I made it into a chicken and rice sort of curry instead of using skewers (didn't have them) and the peanut sauce was excellent. I remember reading somewhere that you can't make good peanut sauce with peanut butter... well, I disagree because this one tasted really good! Thanks! :D

Mine came out a bit dry... but I wonder if it is because I forgot to add onions? (didnt have time to run to the store) so I added some onion powder. Other than that I did everything on the recipe except the thai chili sauce (that might be why too) and added some salt to bring out the flavor more. ^^ It tasted good! Hope to make them again. :)

Swedish Sticky Chocolate Cake (Kladdkaka)

I live in Sweden (moved here from Texas) and was looking for an easy kladdkaka recipe. This was it! Made it directly as stated except I didn't have any vanilla extract (can't find it here???). It is kind of tricky since usually you stick a toothpick in to see if it done, but you want the insides to be fudge-like and gooey. I just stick the toothpick on the corner and check until nothing sticks there. Came out perfect! Also, personally I like it chilled in the fridge overnight. My Swedish fiancé likes it with vanilla sauce on it. I prefer ice cream. :)

Restaurant-Quality Baked Potato Soup

I made several changes... which turned it into a pot full of epic win. I mashed two ginormous cooked baked potatoes with sour cream and some salt, pepper, and paprika. Then I cooked everything like was stated, except instead of 2 cups water I replaced it with 2 cups milk. I skipped the potato flakes since I found it unnecessary. I added some garlic powder and paprika powder and then I added the creamed mashed potatoes into the soup. I didn't add the half and half and I added a little cheddar cheese and some bacon to the tops of the bowls. I didn't use the green onions. This was the best tasting potato soup ever. Epic soup is epic.

Bacon-Roasted Chicken with Potatoes

I love this recipe so much. It is seriously the best tasting recipe for being so easy and simple. I only cook with chicken breasts since my fiancé and I are not big fans of dark meat, so that is what I used. There are so many reasons why I love this recipe so... the first being that I only have to dirty 1 PAN ONLY while cooking!! OMG!! Another reason is that you can toss in whatever spices you feel like. I made my own seasoning mix which included some paprika, garlic powder, thyme, basil, oregano, rosemary, parsley, salt, and a little bit of black pepper. I also drizzled over some olive oil. I popped it in the oven for like an hour or so, and the chicken came out super moist/juicy and the potatoes were fantastic. You can't really go wrong with the seasoning mix, so you could pretty much just use whatever you have on hand. I used a little bit of everything and it seasoned the potatoes and meat perfectly. :) Highly recommend this!

Homemade Graham Crackers

These were really good, but I changed it up a bit. Instead of the water, I used milk. I also added a little extra cinnamon, half a teaspoon of salt, and a teaspoon of honey. The batter was quite sticky, but don't let this discourage you! Just keep flouring the surface and the rolling pin. I did have a problem with the crackers only getting brown at the corners when they were in the oven, so I took those out and put the rest back in. It may just be my oven. Also, I recommend you poke holes in them with a fork before you cook them so they don't get any bubbles. I also topped them with cinnamon sugar... I made a mix in a bowl and used 3 tablespoons sugar and 1 teaspoon cinnamon. They turned out not too sweet and not too bland, in other words "lagom" for all you Swedes. At least that is how I felt. Be sure you don't leave them in the oven too long. If they start turning a darkish brown (before a dark dark brown) then they will taste a bit burnt. You want them to get golden! I'm thinking about trying them with cocoa powder next time. =)

Feta and Bacon Pasta Sauce

It was good, but it needs some work. It is lacking some spices but I don't know which. I added some minced garlic when I cooked the leek and I also added some salt and pepper. I feel it was still missing something. But overall it is a good idea. I think if you add some oregano, and lemon juice it may taste better. I will try it later.
