Taco Casserole

My family LOVED this :) Fresh guacamole is a must to accompany this easy dish. I had everything on hand. I will add a can of black beans and a bag of Trader Joes Roasted Corn next time.

Apple Banana Cupcakes

These were AMAZING! I shredded the apples, used applesauce in place of the shortening and used almond milk instead of buttermilk and Gluten free flour mixture. This made them gluten free, dairy free and fat free. No one could tell that they met the special dietary needs of my kids :)

Country Apple Dumplings

It literally took 5 mins to assemble, it baked during dinner and was piping hot for dessert. Everyone raved about how wonderful it was! I used 1/2 cup brown sugar and 1 cup white sugar. Several ate it alone and others had vanilla ice cream- but Everyone loved it!! Thanks for the simple and wonderful recipe :)

Sauteed Apples

Turned out really, REALLY good. I needed to use dairy free margarine, since my son has allergies, but didn't effect the flavor. I'm certain butter would have given it a richer flavor, but that wasn't an option for us. I served them as a side dish with grilled pork chops and steamed broccoli- yummy! My son asked if he could eat the left over apples for breakfast :) I doubled the recipe- based on other reviews and added vanilla.

Frozen Chocolate Chip Cookie Dough Balls

Yummy! We have made these several times- everyone loves them! I add 1/2 tsp salt and soda to make them taste more like cookie dough. I make these dairy free (with Earth Balance margarine) for my son with allergies. I am planning on dipping the few that are left in candy coating (almond bark) to try that. Kids love them and SUPER easy to make! Thanks for sharing! The kids ask for more everytime the bag in the freezer is empty. I usually double the recipe (with no problems) so I'm not making them as often. I've shared the recipe with several people- because everyone LOVES them!

Bacon-Wrapped Asparagus

OMW- half of my family loves asparagus- the other half not so much- UNTIL NOW! This is so easy and absolutely a delight! I brushed EVOO on the tips and sprinkled granulated garlic over the entire pan of wrapped asparagus. I bought 2 bunches (about 3 lbs) of fresh tender asparagus. Since they were slender, I put 2 pieces in each bacon wrap. I only used about 3/4 lb of bacon, using half strips. My husband hid 3 bundles for his lunch the next day, just so they didn't get eatten. There were no left overs and I am sure those 3 would have been gone too. Will make again for sure!!!

Roasted New Red Potatoes

So simple and SOOOOOO yummy! I cut my potatos and placed them in a 1 gallon ziploc bag with the oil and seasoning and shook them to coat. I left them in the bag sealed while the prime rib was in the oven. When the rib came out, I put the potatos and bacon- wrapped aspasagus (this site) in for 25 mins at 425. They were crisp on the bottom side and soft and perfect inside. I used the Pampered Chef stoneware bar pan for these, which helped cispen the bottom side. Will make over and over- my entire family and our dinner guest LOVED these!

Restaurant-Style Prime Rib Roast

This was so easy to make and it was WONDERFUL!! This was my first attempt at Prime Rib and everyone loved it! I had 2 smaller ribs (one 3.5 lbs and one 4 lbs), so I doubled the flour and seasonings to adequately cover both- I could have used just a single recipe- I really, really coated it (which was really sealed in the juices- only fat drippings in pan). This was so juicy and cooked to a perfect medium rare. I followed the advise of another reviewer and did 20 mins/ lb. and baked at 425. They didn't come all the way to room temp. before I coated and baked them (which I think added about 15 mins), and turned out very tasty. I served with the bacon wrapped asparagus and roasted red potatos (also from this site) and my version of a spinach strawberry salad. Will DEFINITELY make again. My husbands taste buds were in heaven at dinner tonight :)

Individual Baked Eggs

These are so much fun! I personalized each one to the likes of the diner. I sprinkled sausage bits on the bottom of my husbands, I added peppers to my sons, I used turkey bacon and egg whites on my daughters and mine with chives sprinkled on top. They make a very impressive presentation- and YUMMY!!!! Definitely a keeper and so easy to personalize to individual tastes!

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

I LOVED this recipe!! My family enjoyed the mahi mahi without the sauces.. so sad- since I loved the flavor combinations. Beautiful presentation for little effort it took- really easy :) Will use the roasted red pepper sauce for other dishes too- yummy! I used basil instead of cilantro (I prefer basil- although cilantro is quite a bit cheaper) and I also used pecans. I wish I would have had time to pick up pinenuts, to make a true pesto- but it was wonderful none the less. Will make again.

Spicy Garlic Lime Chicken

Chicken was awesome! I added some lime juice to the water for making rice- it was to much lime flavor. Served with Rice and Green Beans. My family wasn't fond of the sauce as an extra for dipping or to top the rice- but the sauce on the chicken was wonderful.

Bear's Picnic Veggie Dip

I took it to bible study with fresh veggies and sourdough rounds- and the ladies absolutely loved it! It's kinda a cross between spinanch dip and veggie dip. It's thick enough to pipe onto cucumber rounds and top with cherry tomato halves or red pepper pieces. It was really yummy!

Cola Steak 'n' Onions

My family loved this! I modified quite a bit based on what I had on hand. I normally wouldn't write a review based on how much I modified it- but since no reviews have been written, I didn't want people not to try it! I cut my meat into medallions to get the marinade to coat more meat surfaces. I used 1 Tbsp of Mrs. Dash No Salt, 1 Tbsp Pampered Chef's Crushed Peppercorn and Garlic Rub and 1 Tbsp Greek seasoning. I used 3 Tbsp granulated Garlic (I didn't have any fresh cloves). Mixed with the cola in a ziploc bag and refridgerated for about 2.5 hrs. I sliced a whole yellow onion and 1/2 of an 8 oz tub of fresh mushrooms to cook with the meat. I made the remaining basting and dipping sauce in an electric skillet and once reduced, I placed the meat in with the sauce and topped with the onions and mushrooms- covered and let cook. I stirred every 3-4 mins for about 15 mins total. The meat was SOOOOO tender and melted in your mouth. It had GREAT flavor- although we like it a little spicy/ zippy. I served with green beans, garlic bread and roasted gold potatos. It was a huge hit! Thanks for the recipe!

Bacon-Wrapped Grilled Elk Backstrap

My family LOVED this! They are not big on marinades or to many seasonings that mast the true flavor of the meat. This recipe enhanced the natural flavor of the elk and added just the right amount of spices. It's January in MN- so I broiled it in the oven. I can't wait to try this recipe over an open flame!! Thanks- definitely a "do-over"!!
