I made these on Mother's Day. Like some of the other reviewers, I kept the pastry shells whole and just made 6. Very easy to make. They were gone in seconds!

Black Bottom Banana Cream Puffs

These were delicious and a big hit with my whole family! I recommend baking the pastry shortly before serving. I pre-made them earlier in the day for my first batch and they were a bit too tough. For my next attempt, I only pre-made the banana pudding and saved everything else for serving time.

Apple Chicken Quesadillas

I made these last night and my family loved them. They make a lot so I'm going to use them as an appetizer for my next get together. I did double the cheese based on other reviews just because I know we love cheese. I think one apple would be sufficient as well. I diced them up and the apple really added to the flavor. This is going into the menu rotation. Thanks for sharing it!

Apple Chicken Quesadillas

I wrote a review back in September after making these one time. It's now January and I'm still making these as a regular meal. I even made them last night for a New Year's party and they were gobbled up. I haven't changed the recipe much other than I use a lot more cheese than called for and only one apple. The other ingredients I don't even measure anymore. If I have leftover filling, which I always do, I cover it and place in the fridge. My husband then makes a burito and heats it in the microwave. Once the quesadillas are cooked, they do not taste good leftover so it's best to only make as much as you think you need. You can always heat up more!

Nany's Cheesy Cauliflower Casserole

I made this as a side for Christmas dinner and it was loved by all. It was very easy to make too. I followed other reviewer's advice and used a 1/2 cup of mayo and 1/2 cup of (fat-free) sour cream. I added garlic powder (about a tablespoon). And I used Italian bread crumbs instead of crackers. Next time I'm going to use half bread crumbs and half panko chips, just to add a little crunch. I tried to bake at 350 degrees, but it took forever and didn't brown the bread crumbs very well. I think broiling for a bit to melt the cheese and brown the top is all that's needed. This has definitely become one of my goto sides for extended family dinners. Thanks!

Pizza Casserole

We love this recipe! If you make this, you should definitely love pepperoni as it adds a very nice kick. I break the pepperoni into small pieces. But you could certainly substitute sausage or leave out as desired. I didn't change one thing and made it exactly as written (which is rare for me). This has been added to our family menu!

Colonial Hot Buttered Rum

I've made this for 2 Christmases now and it's delicious. I add the rum individually as I found it too strong when I added the instructed amount. It's good without the rum too for the non-drinkers!

Classic Macaroni Salad

This macaroni salad is the best I've ever tasted. My family now calls it "Bangin' Macaroni Salad" and we no longer buy from the grocery store. It's become my new job during the summer. :-) I add the carrot, but not the pimento peppers. I also add garlic powder. I use lowfat Mayo and cut the sugar to 1/3 cup, to make it a little healthier.

Crab Appetizer Napoleons

These were a big hit! I made them two nights in a row to use up crabmeat I had left over. I did switch to 1 1/2 tsp of Horseradish and 1 1/2 tsp of garlic powder. But only because my family likes it a bit milder. I used the Puffed Pastries as directed which makes six and it worked out perfectly. These are very filling, my husband only ate one and he never eats one of anything. And I used fat free cream cheese which no one seemed to notice. Thanks for the recipe!

Simple Ranchy Breaded Fish Fillets

I made these the other night and my family loved it. I used Olive Oil instead of Vegetable oil to mix with the Ranch. I used the whole 1oz packet of ranch mix and it was just enough paste for 3 nice sized Talipia filets. The only other tweak I made was to mix Panko with the Italian bread crumbs. I decided to treat my family and actually fried the filets. I am definitely making this again, but will bake if it becomes a more frequent meal. Thank-you for the recipe!

Tzatziki Sauce I

I've made this quite a few times now because my husband is hooked. I followed other reviewers' advice and added cucumber, sauted my garlic, and used Greek yogurt. But my tweaks are my personnel preference. (I also cheated and didn't use fresh dill.) i.e. I loved how garlicky it was. Tzatziki is something I've always wanted to make. Thanks for the recipe. P.S. I also heat my oven to 300 degrees, wrap 5-8 pitas in tinfoil, and heat for 20 minutes. Mmmmmm

Green Beans with Almonds and Caramelized Shallots

I love this recipe! I've been looking for ways to prepare vegetables so my son will eat them and he loved this one. I did add minced garlic with the shallots and peppers, but otherwise, I didn't change a thing.
