About this Cook
I'm a work from home mom of an active 12 year old. I sing in a
My favorite things to cook
I love cooking casseroles, lasagnas and slow cooker meals. This takes away the pressure of having to have a bunch of side dishes ready at the same time. I also like making different appetizers. I found a very good Marinara sauce recipe that goes with everything from Fried Calamari to Zucchini Chips. Dessert is also fun although I'm not very good atit. My best product is home made cookies, but I mostly reserve those for Christmas. Theh I go nuts.
My favorite family cooking traditions
Replacing half the butter with Crisco. Makes drop cookies so much better.
My cooking triumphs
I made a full Thanksgiving turkey dinner only it wasn't on Thanksgiving. But now I know I can do it if I have to. I also learned I can't stick my hand in a raw turkey so it's a two man job for me!
My cooking tragedies
I made two specialty lasagnas from scratch. They took me over 8 hours to make. As I was taking one out of the oven, the dish slipped right out of my hand and landed upside down on the floor. The lasagna slipped right out of it. There was dead silence in the room, including me so I wouldn't scream. The I heard my father-in-law's voice from across the room, "I guess we're not getting seconds." The one remaining lasagna was delicious. There were no left overs.

Green Beans with Almonds and Caramelized Shallots
I love this recipe! I've been looking for ways to prepare vegetables so my son will eat them and he loved this one. I did add minced garlic with the shallots and peppers, but otherwise, I didn't change a thing.

Tzatziki Sauce I
I've made this quite a few times now because my husband is hooked. I followed other reviewers' advice and added cucumber, sauted my garlic, and used Greek yogurt. But my tweaks are my personnel preference. (I also cheated and didn't use fresh dill.) i.e. I loved how garlicky it was. Tzatziki is something I've always wanted to make. Thanks for the recipe. P.S. I also heat my oven to 300 degrees, wrap 5-8 pitas in tinfoil, and heat for 20 minutes. Mmmmmm
