Russian Mushroom and Potato Soup
Everyone loved this one including our master chef mom and very picky dad. My sister and I stuck to the recipe except for a few little tweaks and it still came out great. We used fresh dill and half the amount of half and half and butter called for in the recipe. We let it simmer a little longer and didn't even have to add flour since it was already thick. It's a great dish for a cold rainy day!

Avocado Egg Salad
My sister and I made this when we started craving late one night and were looking for something super easy to make. Bingo! Skipped on a few ingredients and just used avocados, eggs, mayonnaise, salt and pepper annnnd a teaspoon of fresh squeezed lemon juice. We were a bit skeptical but it turned out delicious! We spread it on a few slices of toasted baguette and gulped them down in no time! Leftover looked yucky but tasted yummy so it was all gone the next day. =)

Fiesta Corn Tortilla Pizzas
Used flour tortilla instead (none of us likes corn tortilla, just a personal preference) and everyone enjoyed it. Made it the lazy people's way... browned them in a skillet on stovetop and then added beans and cheese and heated it more and then removed them, topped it with everything else and moved them to preheated toasteroven for a few more minutes to keep them warm. Voila! Thanks for sharing.
