Gravy is essential for this meal. I cut the fat off the meat. I seared a 3lb meat with salt, pepper, and dry basil in olive oil. I used red skin potatoes, carrots, celery, one can of mushroom soup, dried onion soup and meat broth. Instead of slicing the potatoes, I cooked them whole to prevent them from getting too soft. I cooked the meat on low for 7 hours and it was perfect. I definitely made gravy from the broth with flour and starch. My husband and I loved it. However, our toddler did not. We had plenty left for the next evening.
