With my tweeks this dish was tasty & quite simple to make! Here's what I did & I hope others try it & enjoy it too! In a deep dish lasagna pan, I sprayed it lightly with pam. Poured entire 1 lb bag of white tortilla chips. Cut 2 lbs boneless chkn breast into tiny cubes & cooked in a Tbsp of oil & 1/2 tsp Cumin. Drain juice & keep chkn in pan over med heat. Add 2 cans Cream/Chkn Soup, 1 can Cream/Mushrm soup, 1 can Ro*Tel diced tomatoes w/grn chilies & 1/2 tsp Cumin. Mix til warm & well blended then pour over chips. Lightly stir to coat chips. Then sprinkle with 8oz bag of Mexican mix shredded cheese & 8oz bag of Sharp Cheddar shredded cheese. Bake uncovered at 350 for about 25 minutes or when you see the chips begin to brown but don't let the cheese burn. Serve with a dap of Sour Cream & ENJOY! The consistency is that of a casserole & not nachos like some people seem to think! Very filling & tasty. The Cumin adds just the right amount of flavor.
