About this Cook
I absolutely LOVE to cook! I especially enjoy cooking for gatherings such as holidays and cookouts. It makes me proud to see others enjoy my food and hear the compliments on how good it is. The one thing all my ex's (LOL) continue to say to this day is they sure do miss my cooking and sweet iced tea!
My favorite things to cook
I love to cook dinner, deserts and apetizers for something to just sit out so everyone can munch on. I like to experiment with all sorts of foods in many nationalities. Layered Bean Dip; Chicken Parmesan; Fried Pork Chops; Slow Cooked BBQ; Cheesecake; Chili; Lasagna; Beef & Chicken Fajitas; Sashimi; are just some of everyone's favorites that I make on a regular basis.
My favorite family cooking traditions
None. I'm the first one in my fam who enjoys cooking as much as I do. In fact my 14 yr old daughter has been watching the food network since she was about 7 (her choice) and she knows ALL the chefs. So I guess I've passed my love for cooking onto my dear daughter. She now wants to become a chef and a photographer.
My cooking triumphs
I have a friend from Guam who has eaten plain white rice everyday of his life. When he tried mine, he said it's the best he's ever eaten. When he comes to visit he always asks if I have any rice made! Since he's from a country that has the cooking method down to a science, I take this as a GREAT compliment. And I DON'T use a rice cooker.
My cooking tragedies
When I was about 19 yrs, out on my own and first starting cooking, I cooked Sweet & Sour Chicken for me and my boyfriend. The sauce was so thick it was like paste! Since I was new to the cooking world I had no idea how to fix it! I was so embarassed but we laughed and joked about it for a long time. BTW... we ate it anyway and kinda smeared the "paste" on our chicken! LOL!!

Porcupines
Made as instructed & won't make this way again. No taste & meatballs fell apart. Needed worcestershire sauce & parsley for taste and a couple eggs so the meatballs don't fall apart. I will use a good pasta sauce instead of water & tomato sauce for added flavor. I will also place in a dutch oven, cover & simmer til done instead of adding heat to the house from the oven in this super hot summer!

Hubby's Pizza Bread
No taste. If you follow the recipe as instructed the pepperoni vanishes as though it's not there. I would suggest adding more italian spices and perhaps crushed red pepper flakes and definitely wait to add the pepperoni in the last kneading cycle so there will be some bits there to taste it.

King Ranch Chicken Casserole I
With my tweeks this dish was tasty & quite simple to make! Here's what I did & I hope others try it & enjoy it too! In a deep dish lasagna pan, I sprayed it lightly with pam. Poured entire 1 lb bag of white tortilla chips. Cut 2 lbs boneless chkn breast into tiny cubes & cooked in a Tbsp of oil & 1/2 tsp Cumin. Drain juice & keep chkn in pan over med heat. Add 2 cans Cream/Chkn Soup, 1 can Cream/Mushrm soup, 1 can Ro*Tel diced tomatoes w/grn chilies & 1/2 tsp Cumin. Mix til warm & well blended then pour over chips. Lightly stir to coat chips. Then sprinkle with 8oz bag of Mexican mix shredded cheese & 8oz bag of Sharp Cheddar shredded cheese. Bake uncovered at 350 for about 25 minutes or when you see the chips begin to brown but don't let the cheese burn. Serve with a dap of Sour Cream & ENJOY! The consistency is that of a casserole & not nachos like some people seem to think! Very filling & tasty. The Cumin adds just the right amount of flavor.
