Authentic German Potato Salad
Very good version. I miss placed my recipe that a German friend gave me during my recent move and this recipe had similar ingredients. I purchased the ingredients before I discovered my recipe was missing, so I used 5 lbs. Yukon gold potatoes and white wine vinegar. I cooked the potatoes whole, peeled them after they cooled and cut them into slices. For the first time I also used turkey bacon (12 oz.package). The turkey bacon was slightly less crisp than the real stuff but did not affect the flavor. My recipe didn't cook the onion and I really liked the flavor it added. I had to add a a little canola oil to saute the onion, since there was not enough fat in the pan from the turkey bacon. For 5 lbs. potatoes I tripled all of the ingredients except sugar, and used a whole cup of water. On a separate note my German friend always told me the amount of water you add varies depending on the potatoes, how done they are, etc. Her advice was to start with 1 cup H20 for 5 lbs, potatoes. For a fast version you can microwave store bought bacon bits (real bacon.. not imitation bacon bits) The microwave gets the bacon crispy. I have does this in the past and it works great next time I make the quick version I will toss the onion in before microwaving. There is enough fat in the bacon bits to cook the onion.

Ultimate Twice Baked Potatoes
I have been making 2X baked for years, without a recipe. This recipe had all of the same ingredients I use, so decided to give it a try. This recipe had all of the right measurements. I usually throw the ingredients into a bowl and make adjustments as I go. Measurements made the process much faster. I use light sour cream and 2% cheddar for the potato mixture and the fattening stuff on top because 2% doesn't melt the same. I use the bacon peices Costo sells in a bag and crisp them in the microwave on a paper towel (we like our bacon crspy). *Note* 1/2 cup bacon bits = 8 slices fried bacon. I tripled the recipe and will put them in the freezer. Twice baked freeze great. My huband and daughter, that have a both have gift of never gaining weight, will snack on them daily until gone. I will need to practice a lot of restraint.
