Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

This was ridiculously good. I also finished the chops off in the oven smothered with the tomato mixture. If you're trying to cut calories, this dish is so rich I think it would do just fine without the feta. My husband said this is now his favorite dish!

Fettuccine with Sweet Pepper-Cayenne Sauce

This was so, soooooo good. I cleaned out my fridge and used 1 red pepper, 1/2 each of yellow and orange peppers, asparagus, red onion, and mushrooms, along with some thin sliced chicken. The cayenne bottle and I had a difference of opinion on how much should come out on the first shake and I think I put about a 1/4 cup in there (!), so it was really spicy, but all the extra ingredients and sour cream toned it down. Really good base recipe that's super easy to jazz up. Thank you for posting this!

Burrito Pie

This was a great basic recipe. I skipped the refried beans altogether and added a can of drained black beans to the meat mixture, added a package of taco seasoning as so many suggested, and used fresh jalapeno and serrano peppers instead of canned chiles. I used a lot more cheese, too, but that's personal preference. This was a really good and easy week night dinner that made great leftovers!

Chicken, Mushroom, and Polenta Lasagna

This is a good one! I tossed the chicken chunks in the pesto sauce instead of trying to smear it over the pieces of polenta, and used canned tomato sauce for convenience. I couldn't find pre-made polenta, so I made my own, nothing is easier! Next time I'm going to try broiling the polenta in the oven instead of taking the time to fry all those pieces in several batches. I really liked the polenta in place of pasta, it gives it such a good texture. Thanks for the recipe!

Candy Bar Cookie Squares

Ok, I picked up this recipe skeptically thinking, Is it going to be like a cookie or like a cake? The answer is it's going to be AWESOME! It came out like a really chewy cookie. The only thing I did different was chop up an extra Snickers bar to sprinkle on top before I baked it. Such a good easy recipe!
