The Best Lemon Bars

Very yummy. It's true that, although it goes against my instinct, it's better for these to be slightly overlooked than undercooked. Next time, I will make them in a 9x9 pan so they are thicken. 1/2 tsp salt in the crust is good. 3 lemons are good too.

Whole Wheat Blueberry Muffins

I made this with soy milk, but otherwise left it the same. These were delicious. They were moist, light, and flavorful. I'll be making them again for sure.

Asian Marinated Pork Chops

Following jadie's suggestion, I baked it in the marinade instead of grilling. It was great! I left the chili paste out for the kids, but I'd make it with it if they were not going to be having it. I'm sure it'd be great! This was a big hit. My husband loved it, and my kids asked for seconds. Unbelievable!

Banana Oat Greek Yogurt Pancakes

Very yummy! And real food, too! No sugar, no white flour, just real, good food. It doesn't make as much as the recipe says - I only got about 3 pancakes out of it. Make sure to x8 this recipe for the fam so you'll have plenty of leftovers!

Best Chocolate Chip Cookies

Awesome recipe! I like them even better when the dough sits in the fridge for a while before baking. I like them even better when I sub the egg for applesauce and eat the cookie dough. ^_^

Downeast Maine Pumpkin Bread

I didn't like it! I thought the texture was too flat. This "spicy" bread could have had three times the spice and possibly still not be enough for me. I wanted waaaaay more pumpkin flavor.

Shepherd's Pie VI

I feel a little strange rating this recipe, since I made changes. However, I would never have gotten to this point without the recipe. Rather than explain my changes, I'll tell you what I like about this recipe. I really love the carrots. I love the beef broth / ketchup mixture. These were great ideas for me. It was a hit with the hubby! He had 3 servings.

Simple Whole Wheat Bread

I have made this recipe twice, and it went over very well both times. I made this in the morning and my husband ate all the bread I packed for his lunch on his drive to work! I also formed part of the dough into rosette rolls and froze them after the first rise. I used AP flour, since I don't have bread flour or vital wheat gluten on hand. I think the bread turns out a little airier and less elastic, but it works for us!

Irresistible Double Chocolate Muffins

Am I the only one who was surprised that there was not any salt in this recipe? Not looking at the recipe, I went to my cabinet and got out all my usual muffin ingredients - baking powder, baking soda, cocoa powder, and salt. Double check - whaaaa? No salt? So I added some anyway, 1/2 tsp. I really think it helped bring out the sweetness a little more. I didn't have any pumpkin on hand, so I subbed banana baby food. :/ I wasn't going to let lack of pumpkin keep me from making this recipe. Everyone loved it, from the babies to the grandmas and everyone in the middle. The consistency was soooo good, almost fudgy. This is going in the recipe box for sure! Edit: I made these again, this time with pumpkin. Now, I love me some pumpkin, no doubt. However, I have to say that I'll make it with banana next time. It added a depth of sweetness and flavor that rounded these muffins out. Still a great recipe!

Best Peanut Sauce

It was good, but I have a lot of plans for this that I think will make it better. I'd like to double everything except for the peanut butter and water, sub honey for the sugar, sub chili garlic sauce for the hot sauce, and add a tablespoon of rice vinegar and a teaspoon of sesame oil.

Homemade Hamburger Buns

These were very yummy! I made a mistake and turned the oven on with the buns in the oven without waiting for the second rise. Ooops! The funny thing is, they still turned out good! I can't wait to see how they will turn out when I do it the right way! Take 2: I tried it again. I still didn't make it the "right" way, but at least this time I did it with intention! After I formed the dough into buns (rosettes, actually), I put them in the fridge overnight. In the morning, I put them in a cold oven and baked them for 20 minutes. They turned out AMAZING! Best egg sandwiches ever. I predict they're not even going to last the day. My husband had 4 before he even left for work.

Harvard Beets

I used fresh roasted beets and added a cup of water to make up for the juice from the can. Some others commented that they thought this should be sweeter, but I loved the sharp hit of vinegar that hits your nose as you bring the beets close to your face. This tasted just like my mom's. Following another reviewer's suggestion, I brought the sauce to a full boil and let it thicken up. It stuck to the beets well. Using cider vinegar seem like it would be yummy, too! I might try that next.

Homemade Black Bean Veggie Burgers

I have made this recipe 2-3 times just as written (almost-I put it all in the food processor, adding beans last) and it is just great! I can definitely see substituting other grains for the breadcrumbs, and I think adding other veggies or seasonings would be awesome as well!

Lebanese-Style Red Lentil Soup

L-O-V--E. This was fast, easy, and delicious. I have to admit, I used bottled lemon juice since I didn't have fresh, but I can only imagine it would be even better with fresh! As a note, 1 lb of lentils equals about 2 1/4 cups.

This was very yummy! It was quick to make in the food processor. I will have to say, for next time, I need to follow the other reviewer's advice to chill the meat first so that it holds together. That was a problem for me. Also, as a note for myself when I'm looking at my review later - "1 tsp salt, or to taste" for me means 1/2 or even 1/4 tsp. I bet this would be great with lamb!

Slow Cooker Chicken Stroganoff

This was very good and easy. I made changes, although I think I stayed true to the concept. I used homemade cream of chicken soup base. I also used the Italian Dressing Mix recipe from this website. I used Neufchatel instead of full fat cream cheese. I added some mushrooms. It sounds like a lot of changes, but they're all very slight variations. The basic idea of this recipe is enough to keep me coming back.
