Grilled Cheese Sandwich
I love grilled cheese, but if you are pushed for time (even though grilled cheese is really quick) hear is a quicker option. Take a pita that pockets easily, cut it in halves or quarters, open it up carefully so it doesn't tear, and fill with your favorite cheese, then pop the halves in the toaster until the cheese melts (be sure to have the opening up so the cheese doesn't ooze into the toaster). It tastes slightly different, (but is still a gooey deliciousness!) because it's a different bread, and I never use butter when I make it this way. Sometimes I will add tomato slices, fresh basil or parsley too to switch my sandwich up a bit.

Tomato, Cucumber and Red Onion Salad with Mint
My family has been making this type of salad for years, but we just dice the cucumber, tomato, and onion, optional mint/parsley/chives or other green, add salt and pepper to taste and some lemon juice, the lemon juice gives it a great flavor. With the lemon juice though this salad is best served fresh, although it is still pretty good the second day it gets rather watery, the salt makes it watery too.
