Simple Savory Pork Roast

This was delicious! Loved the flavor of the roast. Tried to make gravy straight from the pan juices but it was extremely salty from the garlic salt - remedied it by using lo-salt chicken broth and then flavored it with just enough of the pan juices - came out great.

Banana Chip Muffins I

Made these in a pinch for my son and his friends that slept over... they gobbled them right up! Simple ingredients, mixed up quickly, and baked up quickly... perfect for hungry impatient boys, lol... *I added more banana and 1 tsp vanilla per other reviews.

Cheesy Potato Soup II

Made this twice - first time as is - okay. Next time, used suggestion to make it with chicken broth instead of water. When potatoes were cooked, I did lightly mash some of them to add thickness to the soup. I tried about 1-1/2 c. shredded swiss cheese in place of the american slices and added about 1 c. diced ham and a few cooked crumbled slices of bacon. Plenty of salt in it already, but did add ground black pepper. HOME RUN!!!! Yummmmm :)

Easy Mexican Casserole

My 11-year old Girl Scouts chose this dish to cook for our potluck dinner. They said it was delicious and gave it 5 stars, of course. They made it exactly by the recipe. I think it would be extra tasty if they added taco mix as some others have said. We were unsure about the can of "chili beans"... did that mean a can of "chili with beans" or the kind of beans you put in chili - as in kidney beans? We went with the latter. Either way, they ate it up and thought it was great!

College Student's Gourmet Pasta

Family loved it :) I doubled the recipe for one box of penne. Whisked in 1 tsp flour to milk/butter mixture, to thicken it slightly. Also added steamed broccoli florets and 1 sliced, pan-fried chicken breast (I pounded it flat, seasoned w/ salt/pepper and browned in olive oil) If you love garlic, put in full amount... I personally could use a little less. It was DELISH!

Slow Cooker Chicken and Dumplings

We loved this recipe and will use it often! Used can of chicken broth instead of water as advised. Also per a prior review, I rolled out the biscuits and cut each into 4 strips. They still poofed up a bit when cooked, and were more dense, they way I like... my husband has requested I make them bigger and fluffier so will try again. Served with steamed mini carrots and petite peas.... yummm!

Sorta Salisbury Steak

Really really tender and yummy. I agree with reviews about seasoning before flouring - used plenty of garlic powder, onion powder, salt and pepper. Also agreed on lumpy gravy - the flour coating does clump off when cooking. I ended up straining the gravy into a saucepan and also strained off the layer of fat. I added more broth as we like extra gravy. I thickened it up with a mixture of flour and cold water which I whisked into the gravy (over med. heat). We didn't love the strong Worchestershire sauce flavor so will use a little less next time. All in all... it's a keeper :)

The Best Banana Bread

We loved this bread - simple and yummy! I used real butter and added 1 tsp of vanilla. 3 very ripe medium bananas. I set the timer for one hour, but the top wasn't set and I ended up baking for another 10+ minutes.

Corned Beef Hash

I never made this before, but husband always orders it at the diner so I thought I'd give it a try. Used up the leftovers from St. Pat's Day dinner. I guess it was a winner because he and the kids demolished the entire pan (even the one who didn't "like" corned beef the day before, lol). Simple, tasty, fast, filled the hungry bellies - so what more could I ask?

Grandma McAndrews' Irish Soda Bread

Wow - our first time making Irish Soda Bread, and it was a huge hit! It came out perfectly and was delicious hot out of the oven with real butter and jam. I'm not a lover of raisins in my baked goods, but did not mind them at all. Since every guest and family member loved it, it will be our new St. Patty's Day tradition :)

Chocolate Eclair Dessert

Easy and delicious. Prepare the night before so the grahams have a chance to soften. Used french vanilla pudding. Also used DARK chocolate frosting that I microwaved for 30 seconds before speading on top. So good and everyone loved it!!!

All American Roast Beef

I guess I was always under-seasoning my roasts because after trying this recipe my family raved about the flavor! Really tasty, tender and yummy! I have also used this on a pork roast with equally delicious results.

Buffalo Chicken Dip

I made this for the first time and it was a big hit at the party. I personally wasn't thrilled with the canned chicken (I had never used it before) and will have to try it again with cooked chicken breasts. Everyone else thought it was great and I had requests for the recipe!!

Dumplings

Ohhhhh yummmm. These were so good! My husband requested "fluffy" dumplings to go with our favorite Chicken & Dumplings recipe from this site. So much better than the heavy, dense dumplings from that recipe (made from canned biscuits!!) These were light and tender and will be our "go-to" recipe! Can't wait to make them again!

To Die For Blueberry Muffins

Husband and teens loved these muffins! Fresh, just-picked blueberries really made them great! Tips from others = for lighter texture don't over mix the batter... Also, I used just room temp butter for the topping and squished it into the dry mixture with a fork until it resembled coarse crumbs - *recipe makes too much topping* I made 11 regular sized muffins.

Blueberry Crumble Bars

Everyone loved these bars... Took authors advice and served them warm with a scoop of vanilla ice cream - delish! I used a full teaspoon of cinnamon to make them extra yummy!! Note: my blueberry mixture didn't really thicken up so I just scooped out the berries, spread over crust, then drizzled some of the runny juices over them.
