Beth's Spicy Oatmeal Raisin Cookies

These were delicious. I used all butter instead of shortening, as per other reviews. I also used 1/4 tsp. of nutmeg instead of cloves because I didn't have any on hand. I used a disher equal to 1 Tbs. and the cookies cooked in approx. 11 minutes. I also got many more cookies this way. The biggest thing to remember about oatmeal raisin cookies is that if you want them chewy they need to look a little under done on the baking sheet. I found that there was no extra liquid necessary and I was also able to add about 1/2 c. extra raisins with no adverse effects. Will definitely make these again.

Bacon Cookies

I was so excited to make these cookies. I added some cheddar cheese and used 1/4 tsp. of bacon salt instead of regular; it really didn't help. The only flavor of the cookie came from the bacon pieces themselves. I think the next time I want bacon cookies I'm just going to find a good sugar cookie recipe and add bacon. I was really hoping for something different than a bland cookie with bacon chips.

Roasted Garlic Zucchini and Tomatoes

I love zucchini and tomatoes so I was really excited to try this as a healthy side dish for supper. Unfortunately, for some reason, it just came out bland. I doubled the garlic (DH and I are garlic fans) and the red pepper flakes, but the dish still came out just so-so.

Apricot Chicken II

Cooking time was shorter than recipe stated. After the chicken finished cooking, I took the juices and syrup in the baking dish and boiled it down to make a sauce for the chicken. Pretty much tasted like sweet and sour chicken. It wasn't spectacular, but slightly above average. The ease of the recipe was great.

Mama's Asian Chicken and Rice

I made this tonight for my family. It was fantastic. I did double the sauce recipe like other reviewers suggested, but next time I will triple it (we like a lot of sauce for the rice). It was a bit sweet, but the sweetness definitely helped balance out the spiciness of it. Great dish and very quick to put together. Next time I will mix the sauce ingredients together and cut up the chicken the night before so when I come home from work it will be super quick to put together.

Almond-Crusted Halibut Crystal Symphony

This recipe was pretty good, though not spectacular. I do want to give a heads up. I tripled the sauce recipe and only used one tablespoon of lemon juice and it was more than enough. My husband started the fish as I was whisking the butter into the sauce and both of them were finished at the same time. I would make this again.

California Grilled Veggie Sandwich

My husband and I tried this sandwich tonight and we both agree it's one of the best we've ever had. I used ciabatta bread and made a traditional sandwich instead of an open faced one. I also used viadella onion instead of red onion for some added sweetness. We grilled the bread, made the sandwiches and wrapped them in aluminum foil; then we put them back on the grill to melt the feta a little bit. Both of us agree that the mayo makes this sandwich something special. The sandwich is so good we're adding it to our usual round of meals.

Tomato Alfredo

I don't normally review recipes, but this one was so good I felt compelled to do so. I sauteed some finely chopped onion and garlic before adding the tomatoes and Parmesan to the pan. Also, having read the review that it was grainy, I slowly incorporated the sour cream into the warm tomatoes and melted parm. Since I didn't want to toss the pasta and sauce together, I made the sauce in a separate pan so we could spoon it over the pasta. My husband is not a fan of pasta and he liked this so much he told me to add it to our normal round of meals; that's a big deal.

Coconut Date Balls

These were the best date balls. My family had lost my grandmother's recipe, but these were spot on. I did follow other reviewers and did not boil for longer than 3 minutes and brought to a boil over medium-low heat. I also rolled in powdered sugar instead of coconut because that's what grandma always did. Thank you so much for the recipe.

Chocolate Bliss Chunk Cookies

This was one of the best chocolate chip cookie recipes I've tried. Though I could only work 10 oz of the chocolate chunks into my cookie dough. My cookies didn't spread very much at all. I think those whose cookies spread a lot maybe didn't cream the sugar and butter together long enough or didn't use room temperature butter; both are very important.
