Chef John's Salmon in Parchment

Absolutely delicious! I had never used parchment paper before, and was a little concerned when my packets didn't puff up like they did in Chef John's video. No worries, though! It was so perfectly moist and flavorful. I decided it do salt, pepper, and Herbes De Provence seasoning. I am sure this is one recipe I will try again and again! Thanks so much Chef John :)

My Chili

I love how simple this chili recipe is, and how flavorful it is when it all comes together! I did not have fresh jalepenos so I threw in a small can of chopped jalepenos. The heat was definitely there but tolerant, omit or put in half if you don't like it hot. I also added 2 cans of beans rather than one. The author of the recipe suggests using home-canned tomatoes and I can't agree more. I actually FREEZE tomatoes from my garden and added them in--delicious! I will be making this again and again!

Mediterranean Kale

Awesome! This recipe is so easy to make and full of flavor! Other than the kale, most of the ingredients should be on hand in your pantry. I made it for the first time tonight and can foresee myself making it again and again. Actually, the dressing would be delicious over fish as well. The one addition I made (to use up veggies) was a handful of cherry tomatoes at the last minute or two.

Quick and Easy Vegetable Soup

I love this vegetable soup! I must say the creole seasoning sets it apart, and it is virtually guilt free. I usually don't like reviews that totally revamp the recipe, but I did make some subtle adjustments which kicked it up a notch. They included: adding 1 cut up summer squash, 1.5 cups Bob's Red Mill Vegi Soup Mix (just alphabet pasta, split peas, and lentils-no seasoning), 1 small onion diced, some frozen green beans, and a can of garbanzo beans. All of these made wonderful additions, but the great thing is that this soup is so versatile and tasty that you can make it what you want! ALSO freezes well :)
