Vegan Bean Taco Filling
Awesome! I used a can of Rotel instead of salsa and I left the black beans whole (if you simmer for a bit they will break down a little but it won't be a paste, just like a hearty salsa) Then I added some griled corn right off the cob. The sweetness of the corn offsets the spice and completes the flavor. I also added a bit of lime juice. Great on tacos or as a hot dip for chips. Perfect for a cinco de mayo potluck! It's a keeper!

Balsamic Bruschetta
I've had many versions of Bruschetta, this one is my favorite by far! Make the night before so the flavors really expand in the fridge overnight. Nice, Healthy snack and fit for company. Quick and easy too!

Maple Salmon
This is the best fish recipe ever!! I use minced garlic in the jar instead of cloves and used sea salt instead of the garlic salt. I also baked it skin side up in foil and then opened the foil the last 5 minutes under broil to brown it. WOW! I am not a fan of fish, but I know it is good for you so I have been trying new ways of making it. This is by far the greatest! MMMmm, I think I found my winner. My boyfriend is a fish lover and he ranted and raved about it, we were fighting over the scraps left in the pan.
