Easy OREO Truffles

So super easy! I've ended up making 4 batches this holiday season because anytime my husband gives them to someone to try, they beg me to make it. My 6 year old helps me roll the balls out and she adds the oreo "sprinkles" at the end. She and I have had so much fun making these and my husband has had more fun devouring them.

Basic Truffles

I had issues forming these into balls. I ended up rolling them around 2 spoons and they still looked a bit funky. Everyone who tried them did like them, I just didn't like how hard it was to work with the mixture. I might try it again with some tweaks.

Honey-Garlic Glazed Meatballs

I made these last second for a potluck and they turned out fantastic. Due to time constraints, I started with a bag of frozen meatballs pre-cooked and cooked in the oven per package directions. Like others, I doubled the recipe and combined soy sauce and teryaki sauce for a fantastic flavor. It was a hit at the potluck and now everyone wants to know my secret!

Pesto Cheesy Chicken Rolls

I took reviewers' advice and dredged the chicken rolls in panko bread crumbs with greek seasoning. Served the dish over a bed of orzo pasta tossed with butter and parmesian. My husband and daughter (7) were very impressed. Hubby said this was something he would've expected from a restaurant, not my home kitchen. Was a nice dinner, but it took an hour to prepare.

Graham Cracker Bars

Super easy! First time making a bar and I was very impressed how easy these were. I've always been intimidated with bar recipes, but wanted to try out a new bar pan I purchased. These were sweet, but yummy and the ingredients were easy to use.

Artichoke & Spinach Dip Restaurant Style

LOVE THIS dip! (Would give it 4.5 if I could) I have made it about 3-4 times for potlucks. My only addition is a large dollup of sour cream to balance the alfredo sauce taste (which can come out a bit chalky). I add a little more cheese at my husband's request. I am constantly being asked how to make this dish and love giving it away to friends (though I never take too much credit - I am not afraid to say I got it on All Recipes, my secret weapon in the kitchen!!)

Banana Sour Cream Bread

I've made this twice and its really good, even for high altitude baking! The sour cream balances the banana flavor. I've switched the flour out for whole wheat and it still works great. Thanks for sharing!!

Party Lemonade

Well balanced lemon flavor, though a word of warning: don't leave the lemons in overnight. They break down and make it a lot more sour and bitter. I learned this after making a double batch for two back to back parties and having to compensate for the second.

Rosemary Ranch Chicken Kabobs

Even after adding additional seasoning, it wasn't enough flavor for my family. My daughter ended up dipping it in her typical BBQ sauce (a sign of blandness). Will try something different next time.

Banana Cream Pie Made Easy

I LOVE this recipe!! This is my go-to recipe for a dessert in a hurry! Bananas are readily available (and cheap) and I always keep other items on hand. I have made this with heavy cream, half and half, and skim milk and don't have too much of a preference as to which is the best. I tend to do half 1/2 and 1/2 and half skim milk for the topping to keep it lighter and I do skim milk for the pudding mix. It still comes out rich and thick and yummy. I usually use 1 vanilla and 1 banana cream pudding mix to balance the flavors. I add extra bananas at the crust because I like it with more fruit.

Simply Sensational Truffles

This was a fail! My truffles didn't come out so great and they wouldn't get hard enough to form nicely. They tasted nice (hence the 3 stars), but my family was trying to guess their forms (alien spaceship, easter egg, etc) and that was a bit harsh.

Baked Pork Chops I

I absolutely loved this recipe, though the cook times were a bit off (even for altitude) and my family didn't want to touch the gravy. I substituted panko bread crumbs and added italian seasonings into it, but overall, it was a great foundation recipe to build on. Thanks!

Supreme Scalloped Potatoes

With a bunch of modifications, this recipe turned out amazing! What I did: Started with the foundation items, except my family doesn't like onions so we kept those out. I did not boil the potatoes, but I did slice them. To the soup mixture, I also added garlic powder, onion powder, dry mustard, marjoram, paprika, a dash of cayenne and twice as much salt (1 tsp). I cooked everything for 2 hours (I live in high altitude, so things take longer) at 325. This made the mixture have a lot more spice, and I think it contributed to the overall amazingness of the dish. The basics are there, but adding a bunch of spices really punched up the dish. Thanks for the foundation!

One Bowl Chocolate Cake III

For a non-baker like myself, this was a GREAT recipe! I had *most* ingredients on hand (missing the cocoa), and it was so easy to follow the directions. I made this cake into cupcakes - cooked for 17 minutes (in semi-high altitude) and they turned out perfect! Even peeled away from the wrappers perfectly (can't say that happens with cake mixes). Thank you for sharing this review - I became a baking superstar mom in my house!

Sour Cream Chocolate Frosting

Easy to follow and make. My cupcakes were frosted start-to-finish in 45 minutes flat! (even with a mini helper) It was perfectly sweetened (not too sweet, not too bitter) and I put it on top of the One Bowl Chocolate Cake recipe found here.

Creamy Cheesy Grits

I was looking for a grits recipe that wouldn't use artificial cheese and this one caught my eye. The reviews were very complimentary and honestly, after making this - they can't be more right! I whipped these up in less than 15 minutes total (cooking time was down to about 7 minutes for me), and even though I didn't think my husband would eat these grits, I offered a taste to him, and then he asked for a little bit more. Before I could finish my helping, he was asking to finish off the pot. I took the suggestions to reverse the milk and chicken broth ratios and I also halfed the recipe to make 4 servings instead of 8, but otherwise, no changes (which is extremely unusual for me). GREAT recipe! I might use less parmesan next time, but that would be my only critique - it was a bit sharp for my tastes.

Modified to include 2TB of sugar, 1tsp of salt and 1 1/2 tsp of vanilla for flavor. Otherwise, it was delicious and our go-to for waffles!
