My first cheesecake ever. OK. I've read all the reviews; good and bad. Here's my take. I followed the directions exactly except I PUT A PAN WITH WATER IN THE OVEN with the cheesecake. I didn't over mix but I needed to mix it to the "satiny" stage.
Pros: texture is creamy and soft. No cracks. Cheesecake is picture perfect. First bite is amazing.
Cons: crust was soggy even though I baked it prior to filling. After the first few bites I could taste the egg. Almost reminded me of a sweet deviled egg. Took forever.
Next time: I'll use 2 eggs only. I'll add more vanilla and lemon zest. I'll add more butter to crust and cinnamon.
Good recipe just tweak to your specific taste.
