Spinach and Mushroom Frittata

This recipe was great! I added chopped fresh, organic rosemary and thyme...I also used feta instead of parmesan. Added an extra 1/2 cup or so of ricotta because I used fresh, uncooked spinach instead of the frozen stuff and I was worried it wasn't going to cook as well. Finally, I topped the frittata with more feta. YUM!!

Cream Cheese Frosting II

SOOO good!!!!!!! Used this for my pumpkin cupcakes. I loved this recipe so much that I saved what I didn't use...just so I could sneak more tastes the following day! :)

Adobo Sirloin

I used this marinade for my fajitas...this is my second time using this recipe because it was THAT GOOD! Initially I didn't like the smell of the chipotle, but once it was cooked into the meat it was totally different. I used skirt steak instead of sirloin, cut into fajita strips, and only marinated at room temperature for about 30 minutes. Also, I sauteed it at high heat instead of grilling. I just sauteed up some bell peppers and onions separately and made some guacamole and voila!

Red Wine Braised Short Ribs with Smashed Fall Vegetables

This is the 2nd time I've made this recipe. The first time it was wonderful and I followed the recipe exactly as is. This time, I'm pregnant and cannot tolerate onions and garlic, so I omitted them and added extra rosemary. It still came out stellar! For the veggie mash, I used just the sweet potato and the parsnips. One trick I used was to use less of the veggie broth and instead take some of the liquid from the short rib dish and add it to the veggies while they were cooking down. Made them super flavorful without having to add anything else but a dash of salt.
