Good Old Fashioned Pancakes

This is our go to pancake recipe. I never knew making pancakes could be so easy. These turn out wonderfully fluffy and delicious every time. there is no need to alter the recipe, unless you want to make it your own. Definitely a keeper!

Broccoli Cheese Soup

I thought this was a very good base recipe but needed a little something to make it great. I ended up doubling the broccoli and adding a handful of sharp cheddar, and some parmesan romano blend.

School Lunchroom Cafeteria Rolls

I made a half batch of rolls. The flavor of the rolls was great, but the texture wasn't. They didn't turn out fluffy and light like so many other reviewers found. I think there was too much flour because mine wasn't very sticky before baking. I'm going to try these out again, reducing the amount of flour, and hopefully they turn out as wonderful as others say they were.

Chuck's Favorite Mac and Cheese

This recipe was OK. I used reduced fat versions of everything and substituted Greek yogurt for the sour cream (as I do for everything). The Mac & Cheese had a nice tang, but but about half way through the meal it got overwhelming to me. My husband enjoyed it more than I did, but thought it was really dry and needed more cheese.

Cilantro Serrano Cream Sauce

So easy and so good! I substituted Greek Yogurt for the heavy cream, so the consistency was probably a bit thicker than it would have been otherwise (IMO with cream it would have been a bit too runny for a dip). Has a good amount of heat, but not overpowering. Will definitely be making again.

Mom's Coleslaw

This was a winner! I used a bag of the pre-sliced cabbage and carrots and it worked pretty well (too much liquid). Will definitely make again!

Baked Pork Chops I

This was a pretty good base recipe. We followed the recipe almost exactly, but used the garlic condensed cream of mushroom soup. Next time we make this, I think we will add a few more spices, but we tend to like spicier foods.

Mushroom Slow Cooker Roast Beef

This turned out amazing. My husband hates roasts normally, but went back for seconds with this recipe (and asked for leftovers in his lunch tomorrow). This is now our go to roast recipe and I'm looking forward to making it again soon. I used a bottle of New Belgium 1554 (Black Ale) and I added a small coarsely chopped onion and a spoonful or two of minced garlic. I really think that using a nice full bodied beer makes a big difference in this recipe, and think that using a Bud Light (or similar) would result in a pretty bland dinner when it was all said and done. I paired the roast with some home made mashed potatoes (skin on lumpy mash) and it was excellent.

Grandma's Green Bean Casserole

This was the star of our Thanksgiving table. The recipe was easy to make, and turned out so much better than the cream of mushroom soup recipe. I did make a few minor changes. I was a little paranoid about the sugar so I only used 1/2 tsp. It turned out great with this amount but I will use the full amount next time. The other change I made was to use French Fried Onions rather than the cracker crust. They turned out great, but it could be a little too onion-y if you aren't a fan.

Eggplant with Mushroom Stuffing

I made this dish to recipe with two exceptions, I added red pepper flakes to spice things up a bit, and I used olive oil rather than butter. My husband and I both really enjoyed this dish, and plan on making it again. I also agree that the recipe could do with less bread crumbs. I think that 1/2 cup would be adequate for a small eggplant.
