Green Enchilada Pork Chili

Another one for the whole family! We doubled the meat, since we are a meat-y family, and added diced avocado, a dollop of sour cream and some corn chips for garnish. But, you do not need anything else! This is a fabulous alternative to the standard Rotel dip as well!

Moroccan Shabbat Fish

Like someone else, I tried 200 degrees and ended up cooking at 350 for about 25 additional minutes. Aside from that, the dish was just ok. Not a lot of flavor, so the "fishiness" came out in the talapia, which we didn't even know was possible. The peppers and tomatoes were good!

Indonesian Pork Satay

The whole family loved this! From Daddy down to the babies! We added the marinade and some seame seeds to some green beans for a side and boiled the marinade (added a bit of cornstarch to thicken) to coat and served this over rice. Delicious!

A little sweet...you have to be careful what you pair it with. We tried couscous and I think rice would have been a better balance.

Malaysian Beef Rendang

Our family did not care for this dish. It was very heavy on the cloves and we do not care for a lot of clove flavor. I am sure that this would be tasty dish to some. I have to say that the meat was tender and the balance of liquid to meat mixture was good to provide enough liquid for the meat not to burn. We used our cast iron wok and it worked perfectly!

Chicken Breasts Pierre

The whole family enjoyed this! It is a healthy version of a bbq flavored chicken. The only change would be to drain most of the fat before adding the tomatoes, etc. We also used 1/2 olive oil and 1/2 butter and used whole wheat flour...this made it a little healthier to fit our lifestyle.
