Cocoa Cherry Pork

The pork and dry rub were excellent. I have to agree with others regarding the sauce. It was to acidic. I did add more preserves (I used black cherry)and oregano and it turned out fine. My husband loved it and he can be very critical. It is very simple. A great week night entrée. I also roasted sweet potatoes. Will be adding to my rotation!

Sicilian Homemade Ricotta Cheese

Fantastic. I will never buy ricotta again. It is so easy and taste is very fresh. I put it on top of penne with marinara, add sugar substitute and top with fresh berries and have even added high quality cocoa to make chocolate ricotta as a dessert. I love it while it is warm! I barely drain mine in the cheesecloth as it results in a more moist, creamy ricotta. I have made homemade ravioli for my southern friends and they said they were to die for! You must try this.

Omelet in a Mug

Surprise,I thought I created this method. I have been making omelets in a cup for years also. I use typically use eggbeaters, one wedge of laughing cow cheese, fresh spinach and sun dried tomato. It is healthy, quick and quick clean up. Great for busy week day mornings.

Peking Pork Chops

I agree with other reviewers who said it was too salty. I also decreased soy sauce and it was still too salty and I do love salt but this was too overbearing. It tasted like a typical teriyaki pork chop and was nothing special, in my opinion. On a positive note, the chops were tender and moist. The recipe was very easy. It is not worth tweaking the recipe to me so I will not be trying this one again.

Paleo Slow Cooker Pork Loin

After reading other reviews, I also tweaked the recipe a bit. I recommend adding craisins and/or replacing the raisins. I used both, but the craisins added another layer of flavor that it needed. It was not too spicey, the pork was very moist. I also left out potato starch. It was great over brown rice.
