Best Ever Fudge

This is delicious! It was the result of an evening family craving so I didn't have quite all the ingredients on hand and had to make a couple substitutions. Instead of the marshmellows, I used 1.5 cups of marshmellow creme. Plus since I only had semi-sweet chocolate chips, I just used a 12 oz bag of those and skipped the milk chocolate chips. Really enjoyed it!

Lime Chicken Soft Tacos

Fantastic recipe! As per another's suggestion, I marinated the chicken for 4-5 hours before cooking. I also added more fresh lime juice when I cooked it. We skipped the diced tomato as there is enough tomato in the salsa. Used just a sprinkling of cheddar (to reduce the fat content) and instead of iceburg lettuce used fresh baby spinach leaves. Yum! Will definitely make again. Dh suggested shredding the chicken next time to make it lay inside the tortillas better.

Delicious! Moist and flavorful. As DH said, this recipe goes on the keeper list! I followed the directions for the most part, although I omitted the parchment paper and the mango hot sauce.

Incredibly yummy. I couldn't get any ground lamb, so I substitued ground turkey and it was fantastic. I did decrease the amount of salt and even so it was still a tad bit salty. Very satisfying--a new addition to the keeper list.

Spicy Fish Soup

Simply awesome! The flavor is full and it doesn't taste "healthy." The yogurt gives it a nice richness both in taste and in color. I did make a couple alterations. I'm not fond of cod, so I substituted salmon. I also poured it over a handful of cooked rice. It is on the keeper list.

Garlic Creamed Chicken

Very good, I thought, and Dh *loved* it. In order to lighten up the fat and calorie content, I used the "healthy" cream of mushroom soup, light sour cream, and 1/3 less cream cheese. I can't compare it to the original recipe, obviously, but it turned out great and I won't change a thing the next time I make it.

We thought it was very good! I didn't use nearly the amount of breading the recipe called for and ended up throwing out a bunch of the breading. I don't know if that is common or not though.

Honey Flaked Chicken

I would give it 3 stars, but hubby gave it one, so I averaged it a 2. The chicken was moist and tender, but it was too sweet. The flavors did not seem to blend well and the honey was overwhelming. Even my 6 year old with the sweet tooth thought it was "yucky." And the crust was a tad soggy. I'm not sure that reducing the honey would really improve it either. I will not be fixing it again.

Acapulco Chicken

What a winner of a recipe!! Like many have commented before, I fiddled with the spiciness to get it to what we prefer. Plus, I added a crushed clove of garlic to the onions and peppers. And then put the dish over Jasmine rice. Yummy!!!

Easy Rice Pudding

The flavor was *very* tasty, I thought. But I don't know what went wrong. It was rice soup, not rice pudding. It didn't thicken up much at all. If I do it again, I will probably half the milk. I followed the directions exactly, but a quart of milk left it too soupy.

Easy Ham and Noodles

I thought it was very tasty. I did utilize previous peoples' experiences and I added 1.5t of dijon mustard, 2 dashes of tabasco sauce, a handful of pineapple chunks, and crushed saltines on the top. I also used shredded cheddar instead of chunks. I think it could use a tad less than 0.5C of shredded cheese. A bit cheesier than I liked. Otherwise pretty good for a casserole.
