Balsamic Roasted Pork Loin
This is the perfect recipe to use with a Trader Joe's pork roast. The average TJs pork roast will feed 3 or 4 adults for one night, or a couple adults for a good 2 nights. This marinade is so quick and delicious. I like to mix it in a measuring cup and just pour it into a large Ziploc with the roast in the morning, then it's ready to go into the oven as soon as I get home from work. Comes out nice and juicy, perfectly done. If I'm out of steak seasoning I just get creative with ground peppers and spices! It's always good!

Really, really good and surprisingly quick and easy, which is my favorite part! I made it exactly like it says, wouldn't change a thing.

Quick and Easy Chicken Noodle Soup
Absolutely my favorite 'homemade' chicken noodle soup! I've made this over a dozen times already and will never look for a new recipe. This is better than ANY chicken soup I've tried to make using a whole chicken from scratch. (1) I use Costco's rotisserie chicken and pull it apart while it's perfectly warm; that makes it so easy to get the perfect sized larger chunks of chicken like I love in homemade soup. My kids always love it. (2) I like to double the recipe and use ONE WHOLE rotisserie; that seems to be the perfect proportion of all ingredients to me. (3) I also use only chicken broth (no veggie broths) just because that's what I always stock in my pantry. (4) And I've discovered that the only noodles that do the trick and hold up in leftovers are the original Anthony's Extra Wide Egg Noodles.
