About this Cook
My favorite things to cook
My favorite things to cook are usually the simple 'Tuesday night' foods that the whole family will eat. Especially the ones that aren't visually appealling, but taste wonderful! My mother gave me her super easy recipe for bean dip years ago and although it looks terrible (bean dip is just an ugly food) it is a family favorite. Eery time I take the dip to a party it is the first thing gone and everyone asks for the recipe. Who doesn't love to cook something easy that everyone devours?
My cooking tragedies
Oh, this is an easy one! When my husband and I were engaged, I decided to cook the 'monster' T-Day dinner. I worked full time and was dirt poor then and didn't get paid until the day before Thanksgiving. I bought everything that afternoon and baked and preped all night. The last item on my baking list was my mom's fantastic apple pie that takes 9 cups of shredded apples and is topped with caramel whipped cream. It is fab-u-lous! I was exhausted so I decided to take a nap while it was in the oven. BAD idea. My BIL woke me up 3 hours later. My beautiful apple pie that took hours to make was now toast. My husband and BIL now warmly refer to it as 'Applesauce Pie' and jokingly request it every year. They ate that whole messed up pie right out of the pan and said it was delicious. Insult to injury, when I finally made it correctly for them, they said the 'spplesauce pie' was better. Ugh!

Creamy Strawberry Crepes
I just made these for my husband today, it is his birthday, and we loved them! Not a single change and truly tasty. If you prepped the fruit and filling the night before (assuming the filling will hold up overnight) it would actually be a quick breakfast for any day. We will definitely be trying this again.

Cumin Turkey Burgers
What a shocker! These were much better than we anticipated. Even the 9yo loved them. He is a HUGE burger fan and said these beat regular beef burgers-WOW! I didn't have any jalapenos so I had to use red pepper flakes but these were awesome. I oven-roasted some sweet peppers with a drizzle of EVOO and seasonings and we topped our burgers with pepper jack cheese, baby spinach, and the sweet roasted peppers. De-lish! We will definitely make these again.
