Kingman's Vegan Zucchini Bread

Great recipe. I made a few modifications, however. I subbed 3/4ths cup of coconut sugar for the brown sugar and 3/4ths cup of evaporated cane juice for the white sugar to reduce some sweetness and the results were perfect. I'm allergic to apples so I used carrot puree instead of the applesauce. Also, I ground the flax seeds so they'd gel up in the liquid ingredients. I used gluten-free flour, too, and it held together wonderfully.

Creamy Corn Chowder

I made this with only 1 can of vegetable broth because I like a thick chowder. Also I used one can of creamed corn, one whole kernel corn. After cooking we drizzled in a little maple syrup - sounds weird but it tasted great! Gave it a little sweetness, which was nice. I served this to people who would not have eaten it had they known there was tofu in it, they all LOVED IT. This soup was a big hit.

Fajita Marinade I

I marinated veggies with this and it turned out great! Next time I will use less cayenne because it was a bit too spicy for the kids. Also, I'll probably use half the salt next time too, as it was a bit on the salty side but still excellent.

Carrot Soup

I wish I had read the other reviews about the pepper, because 1 tsp is WAY too much. I also think a tablespoon of parsley and basil is too much as well, I like more subtle seasoning. These covered up the taste of the carrots when carrot soup should emphasize that.

French Onion Soup With Browned Garlic

A very tasty soup! I haven't had proper onion soup since becoming a vegetarian years ago and this one is just like I had remembered french onion soup to be. I broiled the soup in oven safe crocks with some mozzarella cheese on top of the french bread before serving. Yum!

Bread Pudding II

This bread pudding is so good! It was a hit at Thanksgiving this year. I also sprinkled in some cinnamon along with the nutmeg and brown sugar as some others suggested, great idea!

Cake Mix Cookies VII

These cookies are OK, they do taste like they were from a cake mix. Perfect for throwing something quick together for a gathering or school function. They're easy and there isn't really any prep work.

Cream of Potato Soup I

This is a tasty soup. It was a bit on the thin side so I added some flour in the blender before pureeing. I also threw in a cup of shredded sharp cheddar cheese, which was good. I like having chunks in my potato soup so next time I think I'll puree only half the soup and maybe throw in some cooked corn and sliced celery too.

Insanely Easy Vegetarian Chili

This is the best chili recipe I've made, our family's favorite. I usually put use 2 cans of beans though, one black bean and one kidney. Tastes great!
