Stuffed Eggplant Parmesan Rolls

It is not typical that I try new recipe that hasn't been reviewed before. I am so glad I gave this a try. The best part about this dish is the fact that sauce is optional. It was a slight bit confusing that pasta sauce is in the ingredients list when it is baked without, but I cannot rate this any less than giving it the 5 star rating it deserves, and totally understood. I recommend adding the warmed sauce after it comes out of the oven on your individual serving plates, rather than putting all the sauce on and baking it, which may be assumed. Left overs will stay more fresh if sauce is added right before putting it in the microwave. So delicious!

Cabbage and Noodles with Ham

I'm so glad I tried this!!! I simplified this by buying bagged shredded cabbage, and it was a breeze! I know what recipe I'm going to when I have left over ham!

Beef Tamales

This was my first attempt in the tamale making, and I will definately try these again; making it exactly as listed. I took the advise of a review that said these were too greasy, and being on a diet; omitted 1 c of lard and substittuted beef broth in it's place. Everyone loved them but I think it would be much better with the full 3 cups! If you are going to spend all that time in the kitchen, indulge!

Sangria by the Pros

I made this for a hot camping trip and it was perfectly refreshing! This will be my go to, when entertaining in the summer!! I too doubled the batch and kept the fruit the same, then also added mango and blueberries!

Spaghetti Squash Tacos

This had an excellent flavor, and could be used as a side dish instead of a taco filling if you choose. I think, however the taco seasoning should be doubled, or only 1/2 a large spaghetti squash be used. Because the measurement of a squash is an estimate, and of the ease of the dish, I rated it the highest rating! I loved it!

Grilled Peaches

I had some left over blue cheese and so thought I would try this. We were very sceptical, but it was a wonderful complement to a rib eye and potato salad tonight! I would do it again for sure but increase the amount of peaches. It definately could have worked for 6 instead of 2.

Morel Mushroom Bisque

I reduced the pepper to 1 t. and the type to 1/4, and doubled the morels. I also reduced calories by substituting the heavy cream for half & half, and instead of water I used soy milk. I'm giving it the full 5 star rating because it was a great guideline, and am sure it was wonderful the way it was written.
