Crustless Spinach Quiche
Easy, healthy, and delicious! I add one diced tomato and a few mushrooms and use 4 ounces of fresh spinach instead of frozen.

Curried Coconut Chicken
Great recipe! This is the first curry recipe I tried and it was a big hit. I added in one diced sweet potato, which worked well. I also had to add roughly 1/2 tsp corn starch with 1 Tbs. water after 45 minutes of simmering and that thickened it up perfectly. I also added some cayenne pepper and additional curry powder to my plate to spice it up more, although the level of spice was perfect for my wife. For those trying to avoid carbs, this is fantastic over "cauliflower rice." I will definitely be making this dish a staple in our house.

Chili I
I have made this recipe dozens of times over the past couple of years. The flavor is incredible and the sirloin adds a great texture. However, my wife and kids don't like things too spicy, so I do not use the chili peppers. I do slice my own peppers and add them later as a topping, along with shredded cheddar and chopped red onions. I also add more chili powder than the recipe calls for (I add it to taste). Everyone I have made this for has called it some of the best chili they've ever had. The only time I've ever had better chili was at a chili cook off! This is the perfect meal to make on a Sunday and enjoy the rest of the week!
