Jumbo Dark Chocolate Cookies

Just what you need when you need chocolate! The added melted chocolate makes all the difference. Only thing I changed was I substituted some splenda for part of the sugar. This is some where between a brownie and a chocolate chip cookie. Once again, AWESOME!

Luscious Spinach Artichoke Dip

This is yummy. I've made it as is but usually I modified it a little. I put the artichoke hearts in the food processor, a couple of jalepeno slices, and add a couple tsp of garlic in with it. I don't use mayo since I don't like how it tastes. I use an entire 10 oz package of spinach, entire box of fat free cream cheese, 2 heaping TB of light sour cream, fat free mozarella cheese. I make sure to rinse the artichoke hearts and wring out the spinach to get the moisture out. Really important to bake COVERED this is how it stays creamy and doesnt dry out like others have complained about.

Country Quiche

Great starter quiche recipe. You can add about anything to this quiche. I always use more eggs because 4 is never enough to fill the shell. Taste amazing!

Oatmeal Chocolate Chip Cookies II

Recipe is awesome as is! I halved the recipe since I really didnt need that many cookies. 1st time I made as is except a little less flour, as the batter got thick. 2nd time I made it a little bit healthier. I used half butter/half applesauce, used 2 egg whites & 1 whole egg and used 1/2 cup splenda brown sugar & 1/4 cup splenda. I still used less flour. it does take 10-12 minutes to bake. It was just as tasty this way. Very yummy recipe!

Ranger Cookies III

These cookies were really good and a nice change to the ordinary cookies I make all the time. I did use splenda and brown sugar splenda to make them and the cookie was just right not to sweet like others stated. I also switched the raisins to cranberries since I don't like raisins. I will add cinnamon next time since the cookies tasted like they needed a little something.

Breaded Chicken Fingers

This is by far the best "fried" chicken recipe I have ever had the pleasure of making. My niece has raved about this recipe for years and tells everyone they must eat her aunties chicken. I have baked this recipe instead of frying it before and it turns out just as good! When baking you will need to either drizzle some oil over top or spray some cooking spray on it or they will not turn out. If you don't have buttermilk just add 1 tablespoon vinegar or lemon juice to 1 cup milk let it rest 5-10 minutes and then use it in the recipe. Works just as well!
