Pineapple Lemonade Spritzers

This is one of those drinks that you make when you want to treat yourself. Sometimes I want more than lemonade or a soda. This does the trick and is so good! For an adult version, I added a shot of gin and there were raves all around.

Greek Spaghetti I

So easy and so delicious! Definitely a keeper for my recipe box. Next time I might add sundried tomatoes or black olives as suggested or even spinach or fresh basil before serving. Loved it!

YUM! Easy to make and great for when you want a quick chocolate pick me up, but don't want to spend any time in the kitchen. Definitely a keeper!

Chinese Cold Pasta Salad

YUMMY! We recently moved and I couldn't find my cookbooks. I didn't want to spend a great deal of time in a hot kitchen and was dying for Cold Sesame Noodles. This is very good, very easy and very close to the recipe I was looking for. I used the full 2 tsp. of crushed red pepper because we like everything hot and spicy, but if you don't -- definitely cut the recipe back. I added about 1/2 - 1 tsp. red wine vinegar as that is called for in the original recipe (as well as soy sauce, etc.) and that helped round out the salad quite nicely. I made vegetarian broth in the microwave and added the peanut butter to that before putting it all in the large bowl and had no problem with the peanut butter breaking down. Once you let it sit it becomes less soupy, even with the whole wheat noodles I used. This is an excellent recipe!

Mandarin Orange, Gorgonzola and Almond Delight

Fantastic! My husband loves Gorgonzola, but I admit that I do not. Yet I went ahead and made the salad fully expecting to hate it. The flavors balance each other in such a tremendously complimentary way that the strong Gorgonzola taste is not compromised, but enhanced by the sweetness of the oranges and the nuttiness of the almonds. What I expected to hate will be a keeper in my summer salad repertoire. Thanks!

California Salad Bowl

Irish Soda Bread

This bread is PHENOMENAL! I was a little nervous at its consistency as during the preparation phase, it doesn't resemble a typical bread loaf. It was more like very loose chocolate chip cookie dough, but that's ok -- that's the way it should be. This was delicious beyond words and is now a part of my permanent recipe collection.
