Baked Ziti I

Good recipe that I will play around with a little next time by adding more seasoning and some other ingredients like veggies (caramelized onions, roasted red peppers, spinach) or meat (ground beef or turkey, pepperoni, or sausage) and cut back a tad on the sauce. The sour cream definitely added a different taste to the dish, but my husband loved it!

Stuffed Pepperoncini

My husband loved these, but boy were they messy to prepare. Given that one minor problem, once I got the hang of it, they went ok. I bought a pastry bag and will be trying that method this week so wish me luck! The taste was delicious and I will also be using cherry tomatoes for anyone that might not like the taste of the pepperoncini. Thanks for the recipe!

Nutty Goat Cheese Bites

Incredibly easy to make and they look so good! I took the advice of the one the reviewers and chopped up the grapes and that made it perfect. Just to add one little note here: Bleu cheese and goat cheese are not the same thing. Goat cheese is a very mild cheese, the consistency and color of cream cheese, but a thousand times better.

Fig and Olive Tapenade

I love this recipe! I have to make some appetizers for an upcoming party and chose a few safe ones and decided on this one for a change of pace. I did a test run of all the recipes and at first, I truly wasn't sure about this one, but after I let it sit overnight -- fabulous! It's one of those tastes that at first you might seem skeptical, but once it hits your tastebuds, you actually crave it. Definitely will keep this as a permanent part of my recipe collection. Yummy!

Cocktail Meatballs

Super easy and incredibly tasty! In the time that it takes to preheat your oven, you can easily make and roll out the meatballs. This is just such a great recipe that I can't wait to share it at our next party.

Easy Slow Cooker French Dip

Easy to prepare and let sit all day. I did add some garlic powder and worcestershire sauce as some have commented and that rounded it out perfectly. Great recipe!

Southern Praline Pecan Cake

An unbelievably easy cake to make that my husband says is the best cake I have ever made. I will cut back on the oil next time, but other than that it is perfect as is. I did use the Butter Pecan cake mix and the required frosting. If you can't find them in your store, try Netgrocer.com or another online shopping site to get the right cake mix. This is a keeper.

Orange Cake

Wonderful! This is the first bundt cake I have made and I even went out and bought a special pan just to make this cake. Yes, everyone says it doesn't taste like an orange cake, but maybe you could call it a citrus flavored cake. I enjoyed it so much that I made two on Sunday to give away to friends. It's easy to make and a foolproof cake that tastes fantastic, but even better the second day. I cover a cake pan with foil and place my cooling rack on top with the cake to cool. When it is completely cool, I use an eyedropper to put the glaze on the cake. It gives me complete control as to where I want the glaze to go and I can pull up the little run off that collects on the foil with the eyedropper. Yummy!

Banana Berry Smoothie II

Fantastic recipe! Simple, yet so incredibly good! I used frozen bananas that I had stashed in the freezer along with some frozen strawberries. I used Stonyfield Farms french vanilla yogurt to round it out and what a perfect smoothie this was. All I can say is YUM!

Coconut Curry Tofu

YUMMY! If you are afraid to stir fry or make Thai food, then this is the recipe for you! So super easy to make and it comes out tasting super delicious! My local corner market didn't have bok choy so I substituted equal amounts of fresh broccoli and green beans and it came out phenomenal! I will make this again and again! My husband is not a vegetarian and didn't mind the tofu, but I could see this being good with chicken or pork or tempeh instead. Thanks for the great recipe!

Grandma Johnson's Scones

Excellent! I made these on Sunday because I had purchased some from the store bakery the week before and my husband liked those. He said he would skip the Pop Tarts for breakfast if he could have scones. I was a little anxious because I thought they had to be hard to make, but boy was I wrong. Having read the reviews for this recipe, I followed the recipe exactly, but divided the mix into 3 separate bowls. I added cinnamon chips to one, raisins to the second, and chocolate chips to the third and ended up with smaller sized scones that were perfectly sized for us. I had to bake them a little longer, but that could just be my oven. Right now I am preparing another batch and adding raisins to one, dried blueberries to the second, and dried cranberries to the third. Adding extra sugar to the recipe or on top would make them too sweet for us, but if you like sweeter scones, then go ahead. This is definitely a recipe to keep and pass down to your family.

Eggless Tofu Spinach Quiche

This is a delicious recipe for vegetarians and non-vegetarians alike. I have played around with it a bit at times adding different seasonings or different cheeses, but have remained true to the original poster. This is a keeper and great for breakfast, brunch, lunch, dinner, picnics, you name it. As a vegetarian, it was an easy to make meal that tasted great and I couldn't taste the tofu. In fact, I don't necessarily like the taste of raw tofu, but if you compare that to say chicken or any other meat that you simply stuck in the oven without proper preparation or seasoning, you probably would say it tasted pretty bad, too. If you are unsure about it, honestly try it once before saying that you don't like it. It's a great dish that everyone will enjoy. Just save yourself some grief and don't tell anyone that it has tofu in it. :) UPDATE: I highly recommend prebaking the crust for at least 10 minutes to get your crust to hold up well for this recipe. If you don't, it's ok, but it is even better when it is prebaked.

Mou Shu Pork Wraps

I was looking for a recipe that I could sneak in some vegetables in my husband's dinner and this is a great way to do it. Next time, I will cut the ginger in half as he said that the ginger was too overwhelming. I would also cut the pork into thin strips to have it cook faster and I would do the meat in two batches as it cooked, but didn't brown. Not a bad dish, but I think it might need some tweaking. I am just not sure how to accomplish that. Hopefully, someone else here will have great ideas to offer. :)

Barbecued Beef

Great recipe! As a vegetarian, I don't mind making meat dishes for my husband, but often haven't a clue as to what he might like. This recipe had great reviews so I thought I would try it out. I used half of the required meat and kept everything else the same. My husband and our dogs were drooling while the meat cooked all day in the crockpot. When it was done, he said not to change a thing! Next time I might put it in a tortilla for him as a wrap. Thanks again for such a good recipe!

Baked Beans II

Fabulous! My husband is from NH and they love their baked beans in New England. I have made them many times in my bean pot from scratch, but when he said he was in the mood for baked beans, I started searching for a quick replacement. Found this recipe and it was a hit! I made it in a large Pyrex pan and cut up a pound of good hotdogs and let it bake in the oven. I am trying this recipe out again tonight, but this time in the crockpot. I agree that if you use baked beans in the can to cut back on the brown sugar, but other than that, this is a great recipe.

BBQ Chicken Pizza I

SO EASY! I was looking for a quick dinner recipe for my husband and this fit the bill. The only thing that I might do differently would be to caramelize the onions since he doesn't like raw onions. I also bought individual size pizza crusts instead of a large one.

Six Can Chicken Tortilla Soup

Great recipe! I added a can of chopped green chiles, about a teaspoon of cumin, and I used fat free chicken broth. I didn't tell my husband that this was a low-fat dish and was good for him, but he loved it!

Mock Tuna Salad

LOVED IT! Can't remember what real tuna salad tastes like since I have been a vegetarian for so long, but this was really good. You can have only so many veggie burgers and then want a change and this was it. Very good!

Cheater's Enchiladas

Delicious! Our store didn't have green enchilada sauce, but we sufficed with red. In the middle layer I added chunky salsa with diced chipotle peppers. I also added some garbanzo beans that I had sauteed with onions, garlic, green peppers, cumin, chili powder, and cayenne. This was so good!!! We like things a little more spicy and the addition of the chipotle and cayenne was fab!
