Zucchini Patties

My husband really liked these, but I found the cheese and the frying a little too heavy for my taste. I think if you like fried foods, then you will approve of the taste and I could see how kids might gobble them up.

Easy Paella

My first time making Paella and without a paella pan, it still came out quite good. Recipe was laid out extremely well and it was easy to follow and prepare. Thank you for allowing me the opportunity to try this recipe and my entire family loved it.

Slow Cooker Italian Beef for Sandwiches

Super easy recipe that the guys could simply not get enough of and wanted more. I used two packets of Italian Dressing mix, used minced garlic instead of garlic powder, and beef broth instead of water. I toasted rolls and served these sandwiches with sauteed onions and peppers and pepperoncinis on top. Great recipe!

Addictive Sweet Potato Burritos

Fantastic! I made these and did add a little butter and cinnamon to the sweet potatoes and black beans to the bean mixture and it is fantastic. It made about 20 burritos and the taste is so good. No cheese or anything extra needed as these are great as is. Thank you for a great recipe.

Spicy Mexican Style Zucchini Casserole

Great jumping off point, but I made a few changes. Instead of garlic salt, I used fresh minced garlic. While cooking, I used salt and pepper to release some of the zucchini and onions natural juices. I also cut the oil down from 2 T. to 1 T. I didn't have pinto beans, but garbanzo beans and I only put cheese on the top. We devoured the entire casserole and it was a great way to use up some of my garden's zucchini. Thank you for a tasty recipe!

Slow-Cooker Chicken Tortilla Soup

Beyond super yummy! I broke my crock pot at the beginning of summer and just got a new one this week and broke it in with this fabulous recipe. I used 1 1/2 lbs. chicken legs, frozen, that I put in the crockpot along with salt, pepper, and 2 cups chicken broth and let that cook 1 hour. I added the remaining ingredients and followed the directions to the letter, but did add the juice of 1 lime and put the cilantro in towards the end. My husband ate two huge bowls and my son ate three! They loved it and it had great flavor that required no tweaking. This is unusual as my husband usually wants it spicier and my daughter thinks it is too spicy. Not with this recipe. Everyone thought it was perfect! Great recipe!

Peanut Butter Cookies IX

Great cookie! I followed the suggestion of others and cut the sugar down to 1/2 cup each for the brown and white sugars, increased the vanilla, added an extra egg, and increased the peanut butter to one cup and it was great. I also baked for about 10-11 minutes and they came out perfect and didn't crumble at all.

Zucchini-Chocolate Chip Muffins

Fantabulous! Oh so good and was the easiest way to sneak in veggies for a visiting finicky child. I was happy to use zucchini that I picked from my garden and although maybe not great for my waistline, great for the kids to try. The only change I made was to add 1/4 cup shredded coconut and used regular size chocolate chips. Everyone loved them and I doubt they will be around by the end of the morning. Great recipe!

Macaroni Salad I

Quick and easy macaroni salad. As others have mentioned, I omitted the tomatoes and used 1/2 mayonnaise and 1/2 ranch dressing. I also used 1 heaping teaspoon of pickle relish and 4 hard boiled eggs, chopped, and even one of our picky kids ate it up!

To Die For Blueberry Muffins

Love these! I followed the suggestions when I doubled the recipe, but didn't double the topping. I also added vanilla to the batter and used 1/2 white flour and 1/2 whole wheat flour and they were incredible.

Guacamole

YUMMY! My husband has been craving guacamole lately and I have been tired of buying Whole Foods' yummy, but expensive small tub of guacamole. Easy to prepare and I used my own fresh cilantro from my herb garden and cherry tomatoes. I served it with Whole Foods' Restaurant Style tortilla chips (which are heaven!) and my husband and kids wanted to devour it and skip dinner altogether. Thank you for a glorious recipe!

Indian Vegetable Rice

A nice rice dish, but somewhat plain. I followed Jenn G.'s suggestion and increased the cumin and put the veggies in after 10 minutes of cooking. Rice cooked perfectly, but seasoning was rather mild. Tasted great with the channa masala and naan I served, but I would rather have had something that really resembled Indian cooking.

Delicious Pineapple Muffins

I followed Tunisianwife's suggestion and added pineapple to the batter along with nutmeg and vanilla. I also did not melt the butter for the topping but used room temperature butter. Baked the large muffins for 37 minutes, regular size for 30 minutes and they were all gone in minutes. Delicious! I am so glad that I added the extra pineapple to the batter as it was a light, sweet flavor. Thanks!

Watermelon Fire and Ice Salsa

I could easily eat this every day! Fresh and light, it tricks everyone into thinking it is tomato salsa, but IT'S NOT! Great with chips, but delicious with quesadillas, fish, or chicken. A great recipe that you just have to try.

Ultimate Maple Snickerdoodles

Fabulous and then some! I wanted a quick cookie to make since today is the first day of summer vacation and the kids are around. These took absolutely no time to make and came out great. I didn't have maple sugar so I just added maple syrup to sugar and a little cinnamon and stirred that up and rolled the cookie dough in it. I baked them for a little longer, about 12 minutes and they are going to be gone in no time at all. Thanks!

Sheboygan Grilled Brats

Oh I should have taken a photo like I usually do, but they didn't last long enough to photograph. I used 4 brats with the regular amount of onions and other ingredients and they were gone so quickly you would never have known I cooked dinner. Fabulous recipe and easy to make. Thanks!

Great recipe! I doubled the recipe and put in some fresh minced garlic and Italian seasoning. This is a simple, fast meal that anyone would like. The shredded cheese on top isn't mandatory, but is a nice touch if you want it.

Butter Bean Burgers

Great recipe! Instead of the egg, I used silken tofu that I whipped smooth in my mini-chopper. I definitely used too much as it was difficult for the burger to maintain its shape while cooking, but that is my fault. I used about 1/2 cup of tofu and I will definitely reduce that to about 1/4 cup. Another reviewer suggested refrigerating the burgers before cooking. I refrigerated the mixture briefly (about 15 minutes) before forming patties and breading them and then I refrigerated them again. (See photo). They browned, but were sticky, but again -- not the fault of the recipe. My husband and son, the meat eaters absolutely loved the burgers. My son ate 2! Definitely a keeper!

I used Mrs. BB's suggestions and cubed the potatoes before cooking. I also used the oil/vinegar combo she suggested and added the celery, scallions, and garlic. I used fresh oregano and parsley and my entire family enjoyed this potato salad that was light and fresh and not like typical mayonnaise based potato salads. If I didn't make the changes based on suggestions, it would have definitely been a 5 star recipe. Thanks!

Vegetarian Tortilla Soup

Love it! I used 2 T. of cumin, 2 cans of chopped green chiles, 2 14.5 oz. cans of diced tomatoes (one plain, one with sweet onion), a 32 oz. container of organic vegetable broth and 14 oz. of water with 2 vegetable bouillon cubes, one can of black beans, and about 1/4 of a bag of frozen Trader Joe's roasted corn. Everyone loved it and my husband had some at 10 pm because he couldn't get the taste out of his head. Great as is, but when you serve it with Chile Lime Tortilla Chips and the avocado and cheese, it takes it to a whole new level. Thanks for a great recipe!
