Oven Roasted Potatoes

Excellent mix of spices blended together. My two year old loved it, so did my husband. Will do it again, following it to the T. I used a potato peeler to peel my potatoes, so it wasn't much work!

Brown Sugar Meatloaf

This is very yummy. Sweet, but not too sweet. Just right. I will certainly do it again, follow the recipe to the T, but use dried onion flakes, cause my picky husband picks on the onions! I think my toddler might have thought a little too spicy, that's cause I added extra ginger and pepper, but there's no need for it, cause the catchup already has spices in it.

Ribbon Salad

I made this yesterday. My toddler loved it. My husband liked it. My advice is put the flavor you least like in the bottom because it sticks in the bottom (but not too bad!). When you mix the unflavored gelatin with the water, dissolve it well cause it could form tiny little balls of gelatin. I used a mixer to mix the sour cream, milk and gelatin. If you are a jello fan, this is the recipe for you!

Carrot Patties

This is a good substitute for steak. My two year old liked it. From other reviews, I took it would need more spices, so I used 3 cloves of garlic, and some steak pepper seasoning, and also I used 1 cup of whole wheat bread crumbs instead of 1/4 so it would hold better. I dropped teaspoons of the mix in the frying pan and made the patties from there. Quite tasty.

Rice with Black Beans

It turned out good, but recipe should note to use chopped stewed tomatoes instead of sliced, cause the slices didn't blend in causing some tomatoes chunks in the mix (I used Hunt's). I don't know if that's how it's supposed to be, but I will make it again, using chopped tomatoes. My picky husband doesn't like beans, so he didnt' care for it, but that's ok cause there was plenty for me and my 2 year old...

Blueberry Cream Muffins

Good recipe. My husband and toddler liked them. I scaled down to make 12 muffins, used wild blackberries that my son and I had picked up instead of blueberries, and they turned big, moist and great. I used a little more berries than the recipe called for.

Jo Jo's Favorite Banana Muffins

This is a good recipe. Even my husband who does not like bananas thought they were delicious. I scaled it to make 24 muffins, and it yielded exactly 24. I added just a little more milk and bananas to make sure it was moist enough, and it turned out perfect.

Broiled Tilapia Parmesan

My 2 year old and husband loved this one, and he is not a seafood person. I thought it was ok, I prefer my fish with lemon only. Very easy to make. Used 1 pound bag of frozen fish for same amount of sauce. Did not use salt, thought the parmesan already had enough of it. Also cut down on the butter. Will do it again.

Fra Diavolo Sauce With Pasta

Maybe 1/2 teaspoon pepper would be better for the spicy-sensitive. I used frozen cocktail shrimp, and next time, I will use the smaller shrimp and let it thaw first because frozen shrimp gives out a lot of water and it boils. Also remove the tail from the shrimp so you don't have to do it as you're eating. I used a can of whole tomatoes, and let it cook for long enough so it wouldn't be so watery.

Jay's Signature Pizza Crust

Delicious! This makes a real thick pizza, but very soft. I would suggesting getting a giant stone plate. Mine was large, but it expanded beyond the size of the plate. I used "Exquisite Pizza Sauce" recipe as a sauce. I used a little more than 8 oz of shredded mozzarela cheese, and I thought it was enough.

Exquisite Pizza Sauce

Delicious! But... I did not use the anchovie paste. I used only one tablespoon of honey, and my husband still thought it was sweet. Next time I will use half a tablespoon. I used "Jay's Signature Pizza Crust" recipe. Be careful with the measurement of pepper. I think mine was a little bit too spicy, next time I will cut down on the pepper too. This recipe was enough to cover Jay's crust.

Chicken and Broccoli Braid
