Spicy Ginger Chicken Wings

Reviewed: Aug. 6, 2012
Thank you for a tasty wing recipe! We really liked this. These are FULL of flavor! I did make some adjustments for our tastes. First I could only fit 1/2 the wings in my pan for searing, so I cut the butter (i did use butter instead of margarine) way down. I used 1/4 cup butter and cooked the chicken about 4 minutes on each side. I didn't need any more butter to cook the 2nd batch of chicken - there was enough fat in the pan. In the sauce I used 3 serrano's but I did seed them first. I also cut the ginger down to 1 tbsp. I LOVE ginger, but I thought 2 tbsp might be too strong for our tastes. I did have the other tbsp on hand just in case to add it if needed, but I didn't use it. I reduced the sauce down until thick. It took a little longer than 7 mins though. Maybe about 15 mins but it was worth it. I think next time I will cook it down even longer for a thicker sauce with a stronger flavor. Either way - we really LOVED these and will make them again. The star of this recipe is the sauce - it is soooo gooood! Reduce it down until it tastes the best to you. I left out the msg and the sesame seeds too

Chocolate Strawberry Cake

I made this exactly as stated in the recipe. I'm sorry it wasn't for us - it turned out dry and we didn't care for the flavor.

Apple Crisp II

Reviewed: Jul. 13, 2012
Delish! Thanks for sharing. This was really easy, and I had everything on hand. I had some apples I really need to use up and this was perfect. I halved the recipe because there are just 3 of us, but it disappeared right away. So it looks like I'll be making it again!

Blackened Tuna Steaks with Mango Salsa

Reviewed: Jun. 30, 2012
I am not a fish eater, but it was suggested I try tuna steaks. This was my first time eating them and they were delish. Thank you for the recipe. I gave it 4 stars because I halved the heat in the recipe and it was still a little too spicy. The salsa is delish and paired nicely with the spiciness of the steaks. Thank you for giving me another option as I attempt to add more fish into my diet!

California Grilled Veggie Sandwich

Reviewed: Jun. 28, 2012
I liked this sandwich. Thank you for sharing. My husband, on the other hand, did not like the sandwich - he loved the veges, but he felt the spread was too garlicky and wasn't a fan of the feta. Changes I made: I did not grill the veges. I roasted them in the oven. I cut up all the veges and put them on a foil lined baking sheet. I salted and peppered them and tossed them in 2 tablespoons of olive oil with a pinch of sugar. I roasted them in a 450 degree oven for about 25 mins. I used a Tuscan Garlic loaf I purchased from the bakery at my local grocery store. Otherwise I made it as stated and kept it as an open face sandwich.

Roasted Vegetable Orzo

Reviewed: Jun. 25, 2012
Really loved this recipe. Thank you for sharing! I made it without the asparagus simply because it wasn't on sale, but the dish was still so good. I also didn't want to throw wine down the drain, so I adjusted the cooking method for the orzo. I lightly toasted 1 cup of orzo in 2 tablespoons of butter and then added 1 1/4 cups water with a 1 teaspoon of chicken base and a 1/2 cup Sake. I brought that to a boil. Covered. Reduced the heat and let simmer for 15-20 mins until the liquid was absorbed. Then i added in the veges and the Parmesan. It was delish! I will be making it again and again and can't wait for asparagus to go on sale!

Mango Chicken Bake

Reviewed: Jun. 22, 2012
I made this dish exactly as state in the recipe. The flavors in this dish are really great which is why I am giving it 3 stars, however, there are lots of changes I would make next time. I feel 1/2 cup rice is not enough. I would up that to 1 cup for sure and leave the water alone so it doesn't turn out so runny. There was way too much liquid. I would also add the cilantro after it is cooked - all the flavor is cooked out by adding it before baking. I would probably add extra mango as well. And when searing the chicken thighs - I would not use so much oil! You will render fat from the chicken - there is no need to add more. I would slap it in the dry pan and sear it nicely to lock in flavors. If I try this recipe again with my changes I will edit and update.

Tropical Pork Chops

Reviewed: May 12, 2012
Thank you for sharing this wonderful recipe! My husband and I really enjoyed it. I was sure to caramelize the chops really well before I added the sauce. I replaced the water with the pineapple juice from the canned tidbits. I checked for doneness after 10 minutes of simmering, and my chops were ready to eat! I was so happy to, because they were smelling yummy! I served over rice. Next time I will use fresh pineapple!

Eggs Benedict

Reviewed: May 5, 2012
This wasn't to our liking. Too much lemon. I added some sugar to counteract the lemon - it definitely helped, but I would recommend you significantly reduce the lemon in this recipe. You can always add more if needed. I would start with 1 tablespoon. You don't need to do this in a double broiler either - just do it on low and stir constantly.

Garlic Chicken Sausage and Summer Vegetable Saute

This is a keeper! My store does not carry the garlic chicken sausage, so i used the Sundried Tomato. I also served it over rice instead of polenta. Everyone loved it and there was nothing left! Will definitely be making again and again. Thanks al fresco!!

Sweet Italian Chicken Sausage and Tortellini Soup

Reviewed: Apr. 18, 2012
We loved this recipe! Thank you Al Fresco! I did have to make some changes though. I didn't feel like there was enough broth for the amount of noodles, so I chose to double the broth (I used chicken base and water as I didn't have any homemade broth on hand). I used Sake for the wine as that is what I had open, and I have to say it was very nice! The flavor of the broth was so good!

al fresco Roasted Pepper and Asiago Chicken Sausage Frittata

Reviewed: Apr. 15, 2012
Very easy and tasty! I was not able to find the Roasted Pepper Asiago Chicken Sausage, so I used the Al Fresco Sundried Tomato Chicken Sausage. I think when I made it again I will only use 1/2 the package of sausage. That would be plenty for us! Thanks for the recipe!

French Baguettes

Reviewed: Mar. 9, 2012
Wow - really good!! I didn't use a bread maker. I just dumped the water, flour, sugar, salt, and yeast in a mixing bowl. I did make sure the yeast got in the water, and I let it sit for about 10 mins. Then I mixed all together by hand to make the dough. I then turned it onto a floured surface and kneaded until no longer sticky. Followed the recipe exactly including the egg yolk wash. The texture is wonderful. I like soft bread, so this was perfect!! It didn't last long, but there was a piece left the 2nd day and it tasted like a croissant and was almost as light and airy!! Thank you so much for sharing. I never got bread right until now!! Will be making this often!!
