This has been my go-to biscuit recipe for years! Love them! For those of you coming out with tough or dry biscuits, it's because you're rolling the dough out too thin and/or over kneading the dough. I made this mistake a few times when I first started making homemade biscuits which turned out more like hockey pucks. So what you do is after kneading it only for about a minute or less, roll the dough out to about 1 inch thick (which is very thick), cut out circles, and then repeat until the dough is used up. This will give you huge fluffy biscuits every time :) I guess this is what the recipe says to do, but I'm just reiterating the importance of not rolling the dough to thin or over kneading b/c it's crucial! Also, make sure that your butter or shortening is cold.
