Country-Style Chicken

I've made this several times now. Each time it turns out very nicely. The chicken is moist, the coating savory but not heavy. (You can lighten up on the butter if you like).My teenage boys enjoy it, too.

Slow Cooker Beef Stew IV

The Best! My family and I really enjoyed the rich beefy flavor of this stew. WE only had to add a wee bit of salt to it. Perfect.

Broccoli-Stuffed Sole

Very nice! I used brown rice and added some pine nuts to the filling. The paprika sprinked on top adds the needed color to the finished product.

Garlicky Baked Butternut Squash

Salmon with Brown Sugar and Bourbon Glaze

Wonderful. I used light brown sugar (all I had); less butter; more bourbon. I also covered the pan while the salmon was cooking. Very tender and a lovely, not-too-sweet flavor. (I served with wild rice and steamed veges).

Pumpkin Pie Cake

Very nice! Just a tad bit on the sweet side, so next time I'll reduce the amount of sugar I add and cut back on the cake mix topping. The pumpkin mix on the bottom was very pie-like; and the topping had a nice crunch to it. We will do this one again---only less sweet.

Cheesy Carrots

I sauteed the onions in butter and added some garlic. Then about half the amount of green bell pepper and parsley (sauteed them as well). (I don't get on well with bell peppers; I also reduced the cheese a bit) I used a potato masher for the cooked carrots and added about 1/4 cup of chicken broth. My guests like the dish as did my family (two teenaged boys). The consistency was not smooth (not like mashed potatoes) but we liked the texture. I'll make this one again.

Bourbon Chicken

Perfect for barbeque. I marinated the chicken for 24 hours; the flavor soaked in nicely and made for a lovely coating on the grilled meat. This is a keeper.

Savory Garlic Marinated Steaks

Chocolate Zucchini Muffins

Moist, surprising flavor. I made them in the shape of christmas trees and sprinkled them with powdered sugar. My guests loved them as well as my boys!

Spinach, Red Lentil, and Bean Curry

WOW! Surprisingly good. A very very mild, subtle curry more like a dahl (is that the term?) Great over rice (white or brown). My sons want a bit more 'kick' to it, so I may add a bit more regular curry spice to it next time.

Brandied Candied Sweet Potatoes

This is the only sweet potato recipe I use for Thanksgiving and Christmas. Gone are the days of marshmallows on top! The brandy is perfect; over all not too sweet. Just right.

Wow. Really nice! I tried both green and red pears (don't know their proper names). The green were a bit better---softer skin, I think. My teenaged boys gobbled them right up!
