Bacon Wrapped Water Chestnuts II

These were very good!!! 1 package of bacon equals about 3 cans of water chestnuts if you cut the bacon into 1/3ds. I did cut the brown sugar by half and they were still delicious!! I also broiled them for about 5 min at the end just to crisp things up a bit!

Chex® Honey Nut Cherry Crunch

This was delicious! Instead of the rice chex I threw in "Oh's!" cereal- and I had to use dried cranberries instead of cherries but I think the cherries would have been even better! I used Splenda brown sugar and buttery spread instead of butter. Still tasted delicious and I felt a little better about eating so much of it! Will definitely make again!

Raspberry Banana Bread

I thought these were very good! I made mine into muffins also and substituted wheat flour (3/4 c) and used Splenda for the sugar. I forgot to add cinnamon into the first pan of muffins but I did add 1tsp to the second batch and I like those a lot better! Just adds even more!

Sweet 'n' Hot Glazed Salmon

I have made this several times before and always loved it but this is the first time I made it with the apricot preserves instead of the nectar/dried pieces. It was AMAZING and sooo easy! I did add water because of other reviews but it was not necessary! I did add a little extra cayenne to counteract the sweetness- DELICIOUS- even non-fish lovers loved it!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

These were amazing! I used the premade mini chocolate chip cookies and just popped the whole package in the freezer. Very easy. I made yellow cake mix with frosted with chocolate. Everyone raved about them and my boyfriend doesn't really like sweets ate FOUR of them! Thank you for a great recipe/idea. Can't wait to experiment with different kinds of cake/frosting/cookies!!!

Dairy Delicious Dip

I loved this recipe! I made it with 1/3 less fat cream cheese, fat free sour cream, Splenda white and brown sugar, and sugar free maple syrup! STILL tasted rich and creamy! Served with apples, bananas, and strawberries! Absolutely delicious- will definitely make again!

Peanut Butter Haystacks

I really enjoyed these! Sooo easy to make but I did end up having to refrigerate to get them to set- which really wasn't a problem. I usually make these with chocolate but these were a great alternative!

ABSOLUTELY AMAZING! I made double the sauce and sauteed my vegetables in it also. Loaded everything over rice and had an amazing dish! Used Patak mild curry paste.. will make again and again- thank you!

Raspberry Venison Skillet

I thought this was very good! I added red/yellow peppers, broccoli, water chestnuts, and mushrooms to the mixture right when I added the meat. I cooked it for approx 12-13 minutes. The meat ended up a little tough- maybe overcooked but next time I will marinate it overnight. Served like stir-fry over fried rice- delicious and healthy!

Kat's Island Chicken

I halved the recipe and found it delicious! I loved the flavor of the chicken and the combo of pepper and fruit. My store didn't have black bean soup so I just topped with warm black beans. It was still good but I am definitely going look harder for the soup because it needed sauce to keep together! Even my boyfriend who hates fruit loved it! Will make again for sure! Don't know why buy my baking time took almost double than the recipe... just fyi..

Dad's Excellent Scallops

These were amazing! I mistakenly wrapped the scallops twice with proscuitto and that made it too salty. Next time I will only wrap them once around. I think putting them over noodles and alfredo would be amazing!!!

Venison and Barbequed Bean Bake

We really liked this! I did not add all of the cans of beans since I was only cooking for four people. I also omitted the molasses (I forgot to buy it) and didn't miss it. I served it over cornbread with shredded cheddar cheese on top! DELICIOUS! Could not tell it was venison.

Baked Havarti Chicken

Very good! I wasn't sure about this either but it turned out to be a very easy, tasty dish. I would definitely double/triple the mushroom sauce next time because mine cooked down quite a bit. I also threw in some shittake mushrooms for variety. Very good!!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

I thought this was good but not fantastic. I think it really needed something but I am not sure what I used feta cheese and mandarin oranges and those flavors together were very good! Might just try to spice it up a bit next time!
