Delicious Ham and Potato Soup

This is a wonderful soup. The only changes I made were; turkey bacon instead of ham( that's what I already had), 1 chicken bouillon instead of granules, half chicken broth/half water. I sautéed the veggies and some garlic until just softened, added the 'bacon', let it cook a few minutes, then potatoes and liquids. It's super creamy and yummy and flavorful. I'll definitely be making this soup all winter. Thanks!!

Peasant Bread

I am in the process of making this bread,for which I have high hopes. I wanted to make the dough only in my machine but bake in the oven. I dont like the short fat loaves the machine produces. My dough is REALLY gummy and sticky though. I'm not sure if it's me, the machine, the air in my house... I will continue and update. Any suggestions?

Vegan Bean Taco Filling

I think this was a good starting point. I added hot sauce instead of the dry cayenne; green chiles with their juice instead of salsa; then served on whole wheat tortilla with lettuce, onion, tomato. Wish I had a lime handy, I think that would have been a good finishing touch.

Cola Pork Chops

Really yummy idea. I made a few changes though. First, I used chicken thighs because that's what I had on hand. I also omitted the brown sugar and used 1/4 cup bbq and 1/4 cup ketchup, 1/2 can of Coke. The other reviews all mentioned how juicy their versions were so I wanted to cut down on the liquid. I sliced onion and added garlic powder, onion powder and fresh pepper. The chicken came out very tender and flavorful, the sauce yummy and SWEET despite omitting the sugar. Paired it with lightly buttered pasta and that cut the sweetness. Very yummy! Will make again and again.

My Favorite Mexican Rice

This was such a quick dish to whip up last minute and oh so yummy. I made a few changes due to not having exact ingredients on hand. Instead of tomato sauce and green chiles separate, I used a can of diced tomatoes with green chiles. I used low sodium organic broth and added no additional salt. I cut the cheese to 1 cup and used a colby/jack blend. Paired it with black beans,spicy carnitas and fresh corn. My family devoured it! Will definitely be making this rice again and again.

Corned Beef and Cabbage II

This recipe is simple, easy and leaves you with a tender, tasty corned beef dinner.This is the first year I made corned beef for my family (I generally just eat it at Mom's!) I will use this technique from here on out to create my own traditional meal.Thank you for such a great recipe.
