Absolutely Fabulous Greek/House Dressing

I scaled the recipe to 10 servings. It calls for 1/2 cup oil and 2/3 cup vinegar. Too tart so I had to flip flop the amounts of oil and vinegar (2/3 cup oil, 1/2 cup vinegar). I also added a tsp of sugar and a chopped shallot. As written, I give it 4 stars.

Beer Margaritas

Southwestern Egg Rolls

Subbed corn w/trader joes corn salsa. Rolled. Sprayed cookie sheet and rolls w/Pam. 425 15 min, turning 1/2 way. Mixed sour cream w/salsa for dipping. Excellent!

Terrific Turkey Chili

Excellent! Did not have tomato paste so used equal measure of catsup. Added beans for personal taste and a smidge of cinnamon. This is an excellent base recipe for turkey chili and can easily be tailored to suit individual tastes

Roasted Vegetables

Well, I didn't have fresh herbs and i used the dried in lesser quantity and I thought this was excellent! I only used onions and lots of orange and red peppers and it was great! I served it with pearl couscous and some leftover chicken....throw in any and all veggies you have on hand...sugar snaps, carrots, garlic, asparagus...yummy! I will definitely save this one and make again!

Adrienne's Cucumber Salad

I've been making this for years....a great cool summer salad to any cookout. The one thing I've learned here is to boil the vinegar mixture first! I've never done this and would have never guessed it could enhance the flavors so well! Great recipe! And I am a very fussy cook. Try it! You'll like it! And stop trying to change the recipe. Its great as is!Thanks Adrienne!

Fish Tacos

I am on weight watchers. I sprinkled lime juice, green tabasco, and cumin on the fish and baked it @450 for 10-15 min. I used fat free mayo and fat free yogurt in the sauce. Flavors are still there and it cuts way back on the calories. Delicious!!!

Awesome Sausage, Apple and Cranberry Stuffing

With all the rave reviews, how could anyone go wrong!. I did like many others and substituted. No whole wheat/used corn bread. Jones pork sausage. Fresh sage and thyme. Left out the liver. Used chicken stock. Sprinkled w/kosher salt and fresh ground pepper. I'm giving it 5 stars just from sampling it while I made it. I'd give it a 10 if I could! It's in the turkey roasting now! Made a double batch for those leftovers

Dill and Butter Squash

Very good. I took other suggestions and added lots of chopped garlic and I did add a chopped red onion. I did not use any butter but rather sauteed all in 2Tbs olive oil to keep it lighter. Did use a whole bunch of fresh dill and sprinkled the top w/a little parmesan cheese. Delicious "weight watchers" version.
