Southwest White Chicken Chili

This was OK... although it was flavorful, it didn't taste like chili to me... no kick or spiciness. Next time, I would add minced garlic and much more spices, including some red pepper flakes or cayenne pepper. I guess many here found the same thing as quite a few people are suggesting to add to the seasonings.

Spinach and Strawberry Salad

I made this for a family holiday party, picking it because it sounded healthy and because it was mainly green & red... and it was a huge hit, even with family members who usually turn their noses up at my healthy vegetable contributions. It was really delicious!

Spicy Mango Sweet Potato Turkey

This was excellent! I never just make a recipe as is because I love to experiment, so I added some chopped fresh spinach, quartered grape tomatoes from my garden and a handful of chopped walnuts a minute or two before serving. And I made this with turkey breast, rather than chicken. Also, though I like spicy food, 3 T. of hot sauce + red pepper flakes seemed a bit much, so I used a bit under 1 T. hot sauce... delicious! Oh yes, I served it on red quinoa cooked in a little chicken broth.

Ground Beef Stroganoff

I thought this was a great recipe, but I almost always add stuff. I also always use fresh mushrooms and garlic, when I have them on hand. I didn't have enough sour cream, so I substituted some plain Greek yogurt. And I added seasonings: allspice, nutmeg and a bit of paprika, along with some fresh basil. Oh, and I used a can of cream of celery soup! Delicious!

Cod with Italian Crumb Topping

This was just excellent! I did do the mayo/lemon juice mixture recommended by others and I didn't have cornmeal, so I left that out. But I love, love, loved this dish. I served it with quinoa polenta seasoned with Italian seasoning and a sprinkle of grated cheeses and asparagus that I roasted in with the fish. Yumm!
