Half Time Hoisin Chicken Wings

Took these wings to a Superbowl party on 2/2/14 to watch our Seahawks kick the Broncos' butts! Everyone loved the wings. I ran out of my chile/garlic sauce, so squirted in some Siracha. Could have used more, as the wings weren't spicy enough for me. But they sure are tasty. Also rather than laying the wings on the pan and then brushing them with sauce, I threw them all in a large bowl with the sauce and just bathed them in it. Knocked off the extra and laid them individually and already sauced on the pan. Yum!!

Kale Soup

Very tasty, but I modified it a little. I used one can red kidney beans and one can cannelini (white kidney beans). I also had thick boneless pork chops in the freezer that I needed to use, so I cut two of them into small chunks and used them instead of bone-in chops. Finally, I replaced the Pimenta Moida with two whole jalapenos that I cut long slits in to release their heat. When left whole, they're easier to remove after they've done their job.

Chicken Pot Pie

I really love this recipe! I added half a chopped onion and one large chopped sweet red pepper to the peas, potatoes and carrots for vegetables. And because I have yet to find a can or jar of commercial gravy that really tastes good, I used 16 oz. of gravy that I bought at our local KFC. It came out delicious!!

Swordfish Calabrian Style

I'd have to agree with some of the other comments about the reviewer who thought the fish was rubbery. They must be cooking-challenged or maybe they used inferior quality fish. I made this last night and my wife and I both loved it! It's light, but filling and totally delicious! definitely a keeper. I used butter beans instead of favas, but any meaty bean would work. I also suspect that halibut would work great if you can't find swordfish. Nice work, Salvatore! YUM!!!!
