Pizza Casserole

Everyone loved it. Used the recipe as is. But, I combined equal parts of sweet sausage and beef, then added about 20 small slices of thick pepperoni. Then added an extra 4 oz. of spicy tomato paste to the pizza sauce. Also added a small can of sliced olives. I don't think that you can make this poorly, just add your favorites.

Southern Pulled Pork

Great recipe. I used the loin. It fell apart perfectly with a fork. Served with BBQ sauce on a grilled onion roll. Everyone loved it.

Aw-some Coleslaw

Great slaw! I added a teaspoon of celery seed. The whole family enjoyed it. I had a chance to sample KFC's slaw the next day. This recipe was even better than the Colonel's!

Flatlander Chili

Cheddar Buttermilk Biscuits

Very good! I used parchment paper to line the baking sheet. I brushed the tops with and egg wash before backing then brushed with butter when I took them out of the oven. Great recipe.

Pickle Rolls

4 stars for simplicity and popularity. Although, we substituted salami for the ham for a little added flavor. We also used reduced fat cream cheese. The tortillas wrapped without tearing. Ours were at room temperature which, i feel, helps to resist tearing when rolling.

Leftover Turkey Casserole

The whole family loved this. I made it twice over the holidays. The first time, I made it with cream of broccoli soup, a layer of mashed potatoes and lemon pepper. Very good. The second time, I used cream of mushroom soup, mashed potatoes, 4 slices of bacon (bits), lemon pepper and black olive slices. Awesome, (liked cream of broccoli better) just add what you like. Foolproof base recipe.

Heavenly Pink Salad

Family loved it, especially the kids. Caution, recipe set for 12 is enough to serve and army, but I knew that they would love leftovers. Made recipe as written then found some green grapes in the fridge and tossed them in at the last minute. They add a nice surprise to the mix. Next time, I will cut back on the whipped cream to 12oz. and maybe add walnuts.

Jen's Hearty Three Meat Chili

This was a bit different from my typical Chili. We liked the different meats. Everyone enjoyed it. Cooked as listed. Maybe a pinch more chili powder and green peppers next time. Served the second night over a baked potato. Yummmm.

Mediterranean Tilapia

Very good recipe. I'm not real big on fish and am trying to change that. Tilapia is a tasty way to try new fish dishes. I used the sun-dried tomatoes and Kalamata olives. I added salt, pepper, 1/2 fresh lemon, oregano and cayenne pepper. I baked the fish with the tomato/olive mixture for 20 min at 375 degrees. The talapia was excellent. Great base recipe that allows plenty of room to personalize.

Swedish Meatballs II

The meatballs were good enough. But, the sauce was bland, in my case. I'm going to add some beef bouillon to the leftover sauce to see if that gives it the right kick that it needs.
