Mocha Coffee in d microwave

This was good.. Not enough to warrant 5 stars but still very good.. Also, I cant honestly give 5 stars because I dont make it as stated anymore.. I put in a tsp of instant coffee, the cocoa and the sugar and enough milk to make 1 mug.. Then heat in d microwave till really hot.. quite different to this recipe but it started out here. I love it like that and drink it often..

Brazilian Style Flan (Pudim de Leite Condensado)

This is a recipe that we in Srilanka call Caramel pudding.. It is very popular and is a fall back quick and easy pudding that we use very often. That recipe uses water in place of the milk and less sugar for the sauce. I tried this recipe as is and Im comparing it to that. I love the firmer custard texture and the thicker caramel sauce that forms here. Its great warm or cold and I always unmould so the sauce drips down the sides. Somehow, I find that the sauce increases as it chills, so if I unmould straight from the steamer (which I use in place of oven. same cooking time) I have less sauce. If I refrigerate overnight then turn out, more sauce. Anyway, this is so much better than the traditional I grew up with.. My friends agree too.. They've all asked me for the recipe.. :) Who would have thought just milk in place of water would make such a big difference!

Pierogi Potato Pancakes with Warm Apple~Sage Slaw

This is absolutely yummy!! I am just eating as I type.. I made only the potato pancake part since I am home alone for diner and felt like some fried potatoes.. This is so good its tempting me to make it weekly & make myself dangerously obese!! I am eating with garlic sauce and ketchup for lack of sour cream.. well worth the 5 stars..

Thai Pineapple Fried Rice

Solid 5 stars.. nothing less.. this tasted fabulous! My dinner guests loved it too.. I doubled the recipe and followed all the quantities exactly.. There's absolutely no need to change ingredient ratios or any such thing... all perfect. Thankyou Baking nana fo such a good recipe..

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This recipe is excellently good!! My family loved it.. The only changes I made were, I doubled the shrimp in the recipe because it didn't sound enough to me & I added 1 can of evaporated milk instead of the pasta water in the recipe because I had a can that needed to be used up. IMO, even after adding the evaporated milk, I could have added a bit of the pasta water to thin the sauce out a bit more.. It thickens on standing. I also added some cilantro in place of parsley and basil.. Will make this recipe many more times for sure.. We all loved it on the day of making but I loved it even more cold from the fridge for lunch the next day..

Spinach Brownies

Ive always been curious about this recipe but I was a little apprehensive too.. Spinach & it tastes good? So I made just half a batch. The only changes I made was to substitute water spinach for the spinach, sauté the onions in half the butter then add the spinach and sauté till cooked. Turned off flame and allowed to cool slightly then added the rest of the butter and stir till melted (just coz I couldn't be bothered melting it separately). I also added 1/2 tsp of black pepper powder and 1/2 tsp of red chillie flakes to the flour with the salt. Mixed the mozzarella into the flour then added the egg milk mixture & then the spinach. I baked this in an 8"by 8" Pyrex dish, cut squares while quite warm (not hot) and served warm.. I really dunno how it tastes served cold as the recipe states because my family devoured it before it could cool down completely. Easy peasy!! & very good too.

Chocolate Chip Banana Bread II

This is one awesome recipe.. My family raves about it.. My mum has started buying more bananas than we could eat up before it gets overripe coz she knows if it goes beyond ripe it's gonna be used for Banana bread that she loves instead of going waste. My aunts have requested this several times over... Try it.. U won't regret!! & I don't change anything about it except subbing butter for the shortening just because I don't use shortening..

Jambalaya stuffed tomatoes

This was very good.. My entire family loved it. I doubled the recipe and made 8 tomatoes. And used 16 large prawns. 8 prawns I cooked with the rice as stated and the other 8 I sautéed in a pat of butter separately. Then I stuffed the tomatoes as stated including 1 prawn in each. Then placed one of the sautéed prawns on top if the cheese and baked. My tomatoes turned out a bit lopsided after baking probably because Mine were quite ripe although it was firm. The not quite ripe part is important. So the recipe is spot on. The error was on me. But, really good recipe.. Will definitely make many times more...

Easy as Pie Crust

I just made the piecrust for dinner today.. Was really good & beautifully flaky.. Just very difficult to handle, even after chilling (which is not mentioned in the recipe) maybe because of the oil instead of butter.. The top crust couldn't be rolled out for me although I kept the dough chilled till I rolled out the bottom crust (which I also couldn't roll out fully and had to press into the pan after rolling out a smaller round) and filled the pie.. Made it with chicken pot pie IV from this site and my whole family loved it.. They had seconds and even thirds.. It becomes beautifully flaky after baking even if u tend to overwork the dough. will definitely use this recipe again coz it was so quick to make.. Just mayb sub melted butter perhaps for the oil so the dough firms up as it chills so it will be easier to roll out..

Loving Loaf

This is delicious!! Its a recipe I will use over and over.. the topping was what made this cake extra special. The cake in itself (without topping) is good but nothing extraordinary. and you might want to line the bottom of the loaf tin with parchment paper, otherwise this may stick quite badly ( I learned the hard way). All in all, very good recipe worthy of 5 stars!

Sunday Morning Asian Frittata

The taste was ok, but the method has several problems with it.. first, just just soy sauce for seasoning is going to result in a very bland dish. I added some salt and red chillie flakes to the eggs. second, using 8 egg whites will result in a rather crisp sort of frittata which I didn't fancy so I used 8 whole eggs instead of 4 eggs and 8 egg whites. Third, the cooking time is way off... 8-10 minutes on medium flame will result in a well burned bottom. I cooked on the stove about 5 minutes but it still burned pretty badly, which is why I had to top with cheese to mask the burnt flavor that came through even after cutting a layer off. so overall, it's ok, but I dont think I will try this again...

really good recipe.. my whole family enjoyed it.. I did add a little less ginger ale than the recipe calls for but we found the cherry flavour a bit strong (although enjoyable) so the recipe is probably spot on. delicious recipe.. will make many times over..

Amazing Chicken

this is excellent... it is juicy, succulent and very, very good. I drizzled with melted butter about half way during baking to prevent drying out but that made it kinda oily.. it is perfect as is.. I also added some fresh ground garlic and black pepper powder to the mayo to give it more flavor.. very easy and quick.. will make many times over... oh, and the baking time was spot on too.. 30 mins and beautifully cooked succulent chicken..

Frozen Hot Chocolate

This was good but I did change it up a bit so that's why the four stars.. I doubled the chocolate but didn't blend with ice only since I wanted it warm (just added all the milk gradually where the first half cup is added) It IS really good and worth trying.. I made one batch plain and one with 1/2 tsp of coffee per mug.. Love the recipe and will use often..

Crustless Cranberry Pie

This was really nice. I substituted pineapple for the cranberries since cranberries are not available where I live and cashewnuts for the walnuts. Sprinkled top with desiccated coconut before baking.Everything else I kept exactly the same. Once baked I drizzles with pineapple syrup while warm and allowed it to cool then I topped with cream whipped with a little sugar and a few drops of almond essence then chilled till serving. This is a really good recipe. It is dense nutty cake with a really awesome flavour.. It is very good if you need a good dessert fast.

For some people who were in a hurry - thought t might interest them to know that heating the milk mixture slightly will result in faster absorption into the cake. also it will enable the milks to mix better and with less effort.
