I arrived at Mrs. Paula's house last night in Mississippi. Was she ever surprised! She has had a family emergency lately and wasn't expecting me, but there I was. And as I've learned from my travels in the South these last couple of years, I was welcomed into her home and told she would be glad to have me stay with her and join in with all the extra activities due to the emergency. I told her maybe I could actually just put me to work.

The emergency, I learned, was that her 4 year old granddaughter had had brain surgery a couple of weeks ago and is in the beginning stages of being treated at St. Jude Children's Hospital. She has been accompanying them sometimes to entertain the little one while Mom and Dad have had conferences; other times, she has kept the 2 yr. old little brother.

Today was the first day Mrs. Paula had been home a whole day in a while except for weekends. So she told me she was going to continue preparing for Thanksgiving. This past weekend she made Cinnamon Roll-UpsHeath Bar Cake, and Slow Cooker Chicken and Dressing and put them in the freezer. Today, she made a sweet potato casserolea broccoli and rice casserole, and a coconut pound cake. She explained that the Thanksgiving menu this year was chosen based on what she could make in advance and freeze. With the sweet little girl's treatment beginning this week, Mrs. Paula has no idea when they will be together as a family celebrating Thanksgiving, but she wants to be prepared for whenever it is.

After all that cooking today, I would have thought Mrs. Paula and the Mister would have gone out to eat tonight, but she fixed up a pot of Presidential Debate Chili while everything else was cooking and had that for dinner, along with some of the best cornbread I've ever had.

After traveling to Mississippi and then cooking all day today and eating a bit too much chili tonight, I'm exhausted! I'm sure I won't have a bit of trouble sleeping.

Ahhh - I am glad you are there to help Mrs. Paula out, Chef. I knew she could put you to work. Hopefully you can give those kiddos a hug and have a wonderful meal with that wonderful family.

the chef to the rescue. make sure you have huge dollops of love to paula's grand-daughter and the rest of the extended family. you must remember that your host is an extremely strong woman undergoing a serious life trial. congrats on over-seeing some delicious southern meals! try and get your host to relax when she can...i know that may be hard, but we don't need another hospital bed filled.
