I arrived at Mrs. Paula's house last night in Mississippi. Was she ever surprised! She has had a family emergency lately
and wasn't expecting me, but there I was. And as I've learned from my travels in the South these last couple of years, I was welcomed into her home and told she would be glad to have me stay with her and join in with all the extra activities due to the emergency.
I told her maybe I could actually help...to just put me to work.
The emergency, I learned, was that her 4 year old granddaughter had had brain surgery a couple of weeks ago and is in the beginning stages of being treated at St. Jude Children's Hospital. She
has been accompanying them sometimes to entertain the little one while Mom and Dad have had conferences; other times, she has kept the 2 yr. old little brother.
Today was the first day Mrs. Paula had been home a whole day in a while except for weekends. So she told me she was going to continue preparing for Thanksgiving. This past weekend she made Cinnamon
Roll-Ups, Heath Bar Cake, and Slow Cooker Chicken and Dressing and
put them in the freezer. Today, she made a sweet potato casserole, a
broccoli and rice casserole, and a coconut pound cake. She explained that the Thanksgiving menu this year was chosen based on what she could make in advance and
freeze. With the sweet little girl's treatment beginning this week, Mrs. Paula has no idea when they will be together as a family celebrating Thanksgiving, but she wants to be prepared for whenever it is.

After traveling to Mississippi and then cooking all day today and eating a bit too much chili tonight, I'm exhausted! I'm sure I won't have a bit of trouble sleeping.
