Well Hello Bellas & Dan-nos, me-sah still in Oklahoma. But with mis7up having a good time. Lawton/Ft. Sill is very very hot with temps up over 106 almost everyday. Mis7up is doing a program project
along with hosting me, catering, tending to her big-ah family, this is-ah busy little bee. She even had time to nueter her 2 big kitties...me-sah feel sorry for them. That TJ, he likes-ah me. Mr. Jingles....well I'm not-ah sure, he looks-ah and acts like he's
a royal king. Funny cat, he was every where mis7up was. She-ah be in the kitchen, he'd be on a floor mat by zee sink. She be at the dining room table on zee laptop, he'd be under her chair. Talk about love.
mis7up decided to take me to have lunch with her parents and oldest daughter Emily, at a local favorite and staple to Wichita Falls' city. The Original Casa Man'ana. Oh yes, Wichita Falls, is in Texas, an hour from mis7up's place on Ft. Sill Army Base. Her
parents live on the other side of Wichita Falls, so meeting there is a nice little drive. Plus, where we were meeting was right across the street from the downtown Farmer's Market.
So, a nice little relaxing drive in-ah 120 degree van, was totally not pleasant for your dry mouth. WOW, it was a hot one. We show up just after Casa Manana opens for lunch and they were hoping.
This little eatery has been here since 1947 and is owned by Larry & Vickie Karr. A family owned place that has been-ah staple for many many years and for many many years to come. Known for their Red Tacos, Red Wine Sauce & their homemade chips & Salsa.
Zee eatery has been in the family since day one and will continue to do so through to zee next generations of family to come. Ms. Karr was a great lady to allow me & mis7up into their kitchen as their prepared our meals. Zee food was just delicious and the
dining experience was soo comfy and relaxed and staff was such a delight. Me-sah wanna kiss everybody.
What-ah made zee trip to Casa Manana was also mis7up's parents. Now, Clifford & Zeondra Patrick are life time patrons. Mr. Cliff, he says he was 5 when he started eating there and Ms. Zeondra...oh
oppsie, she asked-ah me to call her Muffin, it's what all her friends call her. So Muffin says she must have been about 7. And when Cliff & Muffin dated and got married they continued threw the years to eat here at zee Casa. Even coming back to Texas on vacations
from the Navy, it was a point to eat there. One of the things they would do-ah was to get a bag of homemade tortilla chips & salsa and go to the localdrive-in and watch a movie. Since then the drive-in is no longer around but you could see the fond memories
in their eyes.
They also did some telling on mis7up to me-ah and Emily of things about mis7up. Even mis7up had no idea, so it was fun to listen to them tells me things....hmmm wouldn't you-sah like to know. Well, Muffin tell-sah
me, that mis7up's first jalapeno & taste of lemon slices were done right there in zee Casa Manana when she was a tot. It's also where their family would all get together and eat, and zee last time zee whole lot of zee family was all under one roof to eat there,
was when Mr. Cliff's momma died. We all know, food brings families together. And zhis is a sweet older couple. You-sah could see that zee little family things to zhem is zee things that matter. Me-sah also learned that this little spit fire of a gal, traveled
her whole life from one state to loads of other countries. Being that Mr. Cliff was in zee Navy, going to Veitnam, and traveling his adult life everywhere and raising his girls to respect different cultures and Muffin making every duty station as homey as
possible being away from zee rest of the family. Their bonds are great. Can me-sah have a tissue please?
Okay, enough getting teary eyed. Ms. Vickie Karr, the owner, manager and hostess, meet us when we came in, and her niece Jill, was our waitress. And such a doll. She brought us some hot fresh homemade
tortilla chips & salsa...hmm hotttt mama, that's some good-ah stuff!
Now, when you get your hot out of the fryer tortilla chips & salsa, you can get their neat looking & quite tasty queso and a bottle of their house dressing, called Red Wine Sauce. Zhis sauce is
soo good. Slightly sweet, a little tangy. But soo good. Dress up your chips with it. And it's great. Not sure what all is in it, but Muffin, says it don't matter. It's good. Emily had to show off her-ah food styling to me and asked her momma to take a picture.
An aspiring food displayer.
As we sit, mis7up and I explained me-sah was a traveling chef visiting and learning all about places, food and people. Ms. Karr invited us to look around and then allowed us to walk into the kitchen
and see our food being made. One of zee things Casa Manana is known for is their Red Tacos. Muffin's favorite and mis7up loves them too. Mis7up says, she orders from the menu depending on her mood. And today, she wanted Red Tacos too. We had such a great visit
with Ms. Vickie and zee staff. They really were just a great group of people. And Muffin says that's zee way they always are. Always sweet, pleasant & friendly. They totally go out of their way to make your dining experience homey. And the food was great.
Some of the staff is actual family members.
So, mis7up walked into the kitchen to see a few staff help and watched them make a few plates. The Red tacos are made with corn meal or corn masa, a few other things, that remain a secret, patted
out-ah, and formed into a nice slightly thick red circle and then bent into a taco shape and fried. Then after their fried, they get stuffed with ground taco seasoned meat, homemade refried beans, lettece and cheese....Order up.

Hmmmm!!! Red Tacos w/ Red Wine Sauce
As mis7up & I were talking to Ms. Vickie, we find out a lot of their menu items are Gluten-free. Well all be! Mis7up had no clue that the tacos, enchiladas, zee chips...there's no flour of any kind
in them. Wow...does this change the ball game in mis7up's eyes. She was beyond estatic over that. There are lotsa of people that can't have gluten items and it makes it really nice that, they make their food fresh and contains no flours. Mis7up & Mr. Cliff
try what they can to avoid a lot of gluten but can have it in moderations and now knowing that Casa Manana offers gluten-less items, makes a world of difference to them. Mis7up mentioned to Ms. Vicki that she would soo pass the word around because mis7up knows
there is an allrecipes member from Wichita Falls, who also blogs, that she'd contact him and let him know. About that nice tidbit of info. Plus let other friends in the local and surrounding areas know of this.
Zhis place is amazing, the food is delicious and tasty. Zhis mom and pop eatery, is one reason why it's been a staple in Wichita Falls. Ms. Vicki said she believes the building itself, where it
is nestle in downtown Wichita Falls, was probably built around 1911. But not to totally quote her on that, but she believes it to be so. But her family has been blessed with owning and operating this eatery and will continue to do so for a long time, their
not going anywhere. Since the resturant has been a staple in the community, the business has been threw a few changes, she had stated, one there was an expansion done to accomendate their needs and then 13 months ago, there was a 3 alarm fire in the kitchen
area on June 19th, 2010. And because of the remodel and reconstruction to the back, they moved the kitchen to help with their needs. Mr. Cliff noticed when sitting in one area, that threw him off, telling me-sah and mis7up that the kitchen was behind a different
wall. So when Ms. Vickie explained about the renovations. It made sense.
Also since this is a purely mom and pop family place, zee eatery will be passed down to her granddaughter.
But one thing is for sure, this family eatery works. As mis7up walked about talking to the staff with me, they were just a joy to be around. Smiling and laughing and putting zee food out on zee
tables. Even a couple of patrons were interested in me. Boy did me-sah feel special. Me-sah said Howdy. Plus there was an interesting statue me-sah had to take a picture with. Ms. Vickie says it's pure concrete and isn't sure of how it came to be there. But
it sure is-ah heavy. And I took some photos with a red taco boy...and boy is-ah he tall. His-ah name is? oh noo. Me-sah lost it...hmm me-sah thinks it's Justin. And if it's not...oppsie He was a great support.
Mis7up, Chef Luigi & Vickie Karr
Mis7up kept thinking she might know Ms. Vickie, since she lived in the area. So she-ah asked Ms. Vickie a couple of questions. And it seems from their conversation. They knew each other some how threw another business. She
was such an awesome, kind lady. Everyone that goes through Wichita Falls, must stop down at
Zee Original Casa Manana get a Red Taco Plate. you won't regret it.
Ms. Vickie also showed a couple things of history to me-sah and mis7up, a post card that was used long time ago to send to patrons. And the logo is still used today on their menu's and a piece that
Ms. Vickie had personalized for her personal use, me-sah believed it was a lady's purse or wallet trinket. But mis7up loved the idea that she did that.

Thank you to the staff and family of The Original Casa Manana

May you have many blessings to come and a long journey with your eatery
Chef Luigi, mis7up & her family wish you all the best and years of service.
Mis7up's family will continue to be life long patrons.
So after me-sah nice-ah to meet youse and bye-bye's to Mr. Cliff & Muffin, Emily, myself & mis7up head across the street, to the local Farmers Market, literally across the street. With the heat
and people wanting to sit out in it. Only 2 area farmers were there. We stopped and talked to the lady from Terry Park's Produce, and they actually had a nice small selection. Since they let-ta me take a few photos, mis7up bought some produce from them. Mis7up
bought Tomatoes and some pickling cucumbers, while Emily bought some yellow squash.
We had a great afternoon. It was totally fun. And it sure was a nice way to relieve some stress, spending time with friends and family. And me-sah glad to have shared that time with mis7up and her family and getting to meet some
new friends @ Casa Manana.
