Bran Flax Muffins

Very, very good. I love the fact that it is packed with healthy ingredients and still tastes good. I made a few changes as suggested and inspired by others. I used 3/4 cups of each wheat bran, whole wheat and all purpose flour. I didn't have apples so I substituted with 1 3/4 cup of applesauce. I increased the vanilla to 2 tsp and omitted the cinnamon since I would be adding semi-sweet chocolate chips. I also substituted the carrots for zucchini. I separated the batter into two portions. One portion, I added chocolate chips and made 24 mini muffins (kids!). The second portion I added raisins and walnuts and made 12 regular muffins for the "adults". Mini muffins baked for 15 minutes. Regular muffins baked for 25 minutes. They turned out great and the kids gobbled up all that goodness!

Juicy Roasted Chicken

Excellent! I roasted two 3 lb chickens. I followed the recipe exactly. However, since I had left over lemon grass, I stuffed the chicken cavity with these, in addition to the other ingredients mentioned in the recipe. I placed the chickens on the roasting grill so that the oils could drip onto the roasting pan and chicken would not get soggy. The chickens turned out really juicy and the skin was crispy. Will be making this again!

Slow-Cooker Barbecue Ribs

Restaurant ribs. Husband could not stop raving about it. Super tender and moist. I did as other reviews suggested, I first sasoned ribs with salt and pepper. I added chopped garlic to water and boiled the ribs for 20 minutes. This removes some of the fat and liquid from the meat. I replaced the chili sauce with a bbq sauce I had on hand. Finally, I put the ribs under the broiler with additional sauce basted on the surface to get a beautiful caramelization. Excellent results!!

Gourmet Mushroom Risotto

Wow! So good. I made it exactly as written. No changes at all. However, I did cook it for closer to 45 minutes, constantly stirring and adding the broth. Really worth the effort.

Juiciest Hamburgers Ever

Really good hamburgers. I used veal/pork/beef combo. Since, I didn't have any evaporated milk, I just used milk instead. I added garlic powder and omitted the cayenne, since we have some spice weenies in my home. Husband couldn't stop raving about the flavour and juiciness of the burgers. This is my new go to hamburger recipe.

Salmon Wellington

My family loved it! It was so pretty too. I used blue cheese instead of feta, only because I didn't have any. Also, instead of frozen spinach, I sauteed fresh spinach in olive oil and garlic, and squeezed out the excess liquid. The salmon turned out moist and delicious. I served the salmon with a side of arugula and cranberry salad.

Banana Bran Muffins

Good basic muffin recipe. I made a few changes to incorporate flax seeds and whole wheat flour. I replaced the eggs with ground flax seeds (1 tbsp flax seed meal + 3 tbsp water replaces 1 egg). I used 1 cup of wheat bran and 1/2 cup of each whole wheat and all purpose flour. The muffins came out moist and more healthy.

Classic Bran Muffins

Good simple bran muffin recipe. My batter did not look as wet as in the video. I had followed ingredients and instructions exactly, so I baked it anyway. It turned out great.

Easy Roasted Peppers

Excellent results. Very easy to do. The reviewer who ended up with dried up peppers probably left them too long in the oven. Since the peppers are quartered before being put in the oven, I only needed to cook them for about 20 minutes. The skin got scorched and the peppers were juicy and tender. The roasted peppers were put in a container immersed in garlic and olive oil. They can keep in the refrigerator for up to 2 weeks. So good with crusty bread!

Classic Dinner Rolls

This was a very easy and basic recipe for dinner rolls. They came out really good. I brushed it with some melted butter before baking. Came out golden. Very good. Will try next time as other reviewers suggested with different herbs and cheeses before baking.

Marinated Baked Pork Chops

These pork chops were very good and surprisingly tender. Upon the advice of other reviewers, I doubled the quantity of sauce and reserved half of it for basting and for serving. I marinated the chops for 4 hours. It was baked for the first 30 minutes covered with foil. Then, uncovered for an additional 20 minutes, at which time I basted the chops the one time. It gave a beautiful caramelization to the meat. Everyone enjoyed it, even my really picky 7 year old. Thanks for a good recipe!

Roasted Rack of Lamb

Superb!! I followed the recipe exactly as indicated. The only thing I would change next time, would be extending the cooking time. I found the meat to be a little on the raw side. Other than that, the flavors were amazing! Thanks for a really good recipe.

The Best Meatballs

Really good meatballs. I followed the recipe as indicated except I only used ground pork. I eyeballed the measurements for the seasonings since I only had about half a pound of meat. I used the lukewarm water as mentioned in the recipe...wow! What a difference! The meatballs came out juicy and tasty. Thanks for a great recipe!

Pork Marsala

Really good! The pork turned out really flavorful and tender. I made only very minor changes...since I didn't have fresh mushrooms, I used canned mushrooms instead. Also, I didn't have any marsala wine, so I replaced that with the same quantity of Sherry. I also brined the pork chops as another reviewer had suggested (1/4 cup salt in 1 quart water for 30 minutes). After, browning the pork chops, I removed them from the pan before adding the mushrooms. Once mushrooms were soft, I put the pork chops back in and added the sherry. Delicious!! Thanks for the recipe.
